Breakfast Casserole

I have several recipes to post, several events to post, and I have NO idea how I’ll get them all up on this little blog of mine.  I guess I’ll do what I can this week.  However, I HAVE GOT to get our “monthly” (that I haven’t done in 2 months) Real Estate newsletter out, too.  So much to do, so little time.  I think that’s an appropriate motto for my life.

Wednesday nights are always rushed.  We have church at 6:30, but I like to feed my people before we leave the house, or they would have to eat dinner at 8:00, and that’s not a good plan.  Often, VERY often, we eat breakfast for dinner.  I know that I can cook breakfast and all my maniacs will eat quickly, without complaining, and we can all leave without me fussing at them to finish.  Upon typing that, I’m considering cooking breakfast for dinner EVERY night. :)

My staple on Wednesday nights is Breakfast Casserole.  It’s SUPER easy, and SUPER delicious!  It takes 10-15 minutes to prepare…or as long as it takes you to brown sausage.  I borrowed this recipe from my mom’s friend YEARS ago.  Thank you Jenny Hall!  I don’t know what we would do without your breakfast casserole!

Disclaimers:  I did have a little helper during the process.  AnnaLeigh had just woken up from her nap, and might have a slight case of “bed head,” but she’s the cutest little 2-year old helper around! :)  Also, in order to allow her to help, I got on her level.  We “cooked” on her little table, which was Brad’s little table growing up.  Needless to say, it’s rough looking, but it worked for us.

Breakfast Casserole

Ingredients:

Bisquick, Sausage, Cheddar Cheese, Milk, Eggs, Salt and Pepper

Brown your sausage.  While your sausage is browning, combine all other ingredients as follows.

Crack all 4 eggs in a large bowl.

Beat eggs with a wire whisk.  Maybe i should just say whisk eggs?  Whatever.

Add cheese, bisquick, and milk to your eggs.

Add salt and pepper.  If you forget this step, your breakfast casserole is just not the same.  I think adding your seasoning at this step is so important.

Stir/whisk.  It’s helpful to whisk it if you have a whisk with wide wires (spokes?).  I absolutely don’t know what I’m talking about tonight.  If your wire whisk wires are too close together all your cheese gets stuck inside the wires, and it’s not fun to get it out.

If you have a little helper, let her “help.”

Evenly spread cooked sausage in a 9X13 casserole dish.  You can grease it if you’re type-A.  I’m not, and I’m lazy on top of that, so I figure the sausage will grease the pan for me.  Works for me.

Please notice the sweet little hands helping me take my picture.  She wouldn’t stop moving the dish around, because it stressed her out that it wasn’t straight.  She’ll grease her pans one day.

“Can you see me in you pictuh, Mama?”

Pour egg mixture evenly on top of sausage.

“I’m hepping you, Mama.”

Bake at 350° for 25-30 minutes.  A “food blogger” would have taken a picture as it was removed from the oven.  A mom with 3 wild maniacs takes the picture after it’s been sitting out 15 minutes.  Doesn’t look as appetizing, but it was!

Recipe for Breakfast Casserole

Ingredients:

  • 1 Pound Sausage
  • 4 Eggs
  • 1 Cup Bisquick
  • 1 Cup Shredded Cheddar Cheese
  • 2 Cups Milk
  • Salt and Pepper to taste

Brown Sausage.  Spread sausage evenly in a 9X13 casserole dish.  Crack 4 eggs in a large bowl.  Whisk eggs.  Add Cheese, Bisquick, Milk, Salt and Pepper.  Stir or whisk to combine.  Pour evenly over Sausage.  Bake at 350° for 25-30 minutes.

I usually make smoothies to go along with our breakfast casserole.  I’ll post that recipe someday. :)
