Pizza Night!

We had a fun family meal…PIZZA NIGHT!

I had NO idea what I was going to do for dinner.  I had one can of biscuits, so I could either make breakfast for dinner (which we have almost weekly) or I could copy an idea I saw on my cousin’s wonderful blog, Everyday Blessings.  So, I opted to copy, and we made biscuit pizzas.  They were a HUGE hit!  The maniacs and Brad all agreed they like biscuit pizza better than regular pizza.  Go figure! :)

Biscuit Pizza

  • Can of Jumbo Biscuits
  • Marinara Sauce
  • Mozzarella Cheese
  • Toppings (Olives, Pepperoni, Spinach, Tomatoes, etc…)

Smash the biscuits, or roll them out.  Top with 1-2 tablespoons of sauce.  Put a little layer of cheese.  Let your maniacs load them with the toppings of their choice.  Add a little more cheese (because you can never have too much cheese).  Bake for about 10 minutes or until golden brown.

For dessert…more pizza!  Fruit Pizza.  The kids thought this was the greatest dessert ever!  The fruit pizza would have been much larger, but someone (that has absolutely NO self control) ate HALF the package of cookie dough.   Literally HALF!  I’m not proud…just stating the facts.

Fruit Pizza

  • 1 Roll/Tube of Sugar Cookie Dough
  • Cream Cheese Frosting (recipe below)
  • Fruit (strawberries, blueberries, kiwi, bananas, pineapple, etc)

Roll out a package of sugar cookie dough to look like a pizza crust.  Bake it according to package directions.  Let it cool completely.

Spread Cream Cheese Frosting (recipe below) evenly on cookie.  Top with various fruits of your choice.   If you want to get even fancier, you can top with slivers of white chocolate (to look like cheese).  I thought this was plenty of sugar for my maniacs, so we left the white chocolate off.  Fruit pizza is easy and delish!  The only thing that would have made it better would be homemade cookie dough instead of slice and bake.  There’s always next time.  :)

Cream Cheese Frosting

  • 1 (8 oz) Block of Cream Cheese, softened
  • 6 TBSP Butter, softened
  • 2 tsp Vanilla
  • 2.5 Cups Powdered Sugar (measure then sift)

Cream Butter and Cream Cheese.  Add Vanilla and slowly add Powdered Sugar.  Mix well.

(This recipe makes more than enough for fruit pizza.  You may want to cut it in half…or make the full batch and eat it with a spoon when your children aren’t looking.)
