Ice Cream Sandwich Pie

This summer has been so hot and so dry in East Texas and I have been CRAVING Ice Cream Sandwiches!  I decided it was a good time to break out an old favorite that I haven’t made in a few years…Ice Cream Sandwich Pie!  If you need a delicious dessert that takes about 3 minutes to prepare, then this is the dessert for you!  It’s so easy to put together, and everyone loves it.  Who doesn’t love Ice Cream Sandwiches?!?

I don’t have a picture of my big fork digging into this dessert, because I never got to enjoy the fruits of my labor…my hard, hard labor.  :)  Just kidding.  Well, I actually didn’t get to eat any of this, because I took it to my in-laws’ house, and they deserve EVERY.SINGLE.BITE of it for keeping our 3 maniacs!!!

You will need:

Ice Cream Sandwiches, Cool Whip, Caramel Sauce

(I made a half recipe, but I’ll give measurements based on full recipe)

Unwrap enough Ice Cream Sandwiches to line the bottom of a casserole dish.  I used a small square, but you can make this as large as you like.  It is not imperative that you use the exact measurements…obviously.

Blop (like that word?  spell check doesn’t) half of the tub of Cool Whip on your sandwiches.

Spread it around.

Top with Caramel (which by the way, I pronounce it CARE-a-mul, not car-mul.  I’m not sure if it’s a Mississippi thing or not, but it’s certainly not how these East Texas folks say it.)

If you want to ruin this lovely dessert, feel free to sprinkle crushed pecans or the nut of your choice on here at this point.  I think they are delicious plain, but they don’t belong in desserts.  My opinion only, of course.

Top with Caramel Sauce.

Top with another layer of Ice Cream Sandwiches.

Spread the remaining Cool Whip on top.

Watch your back, because as soon as your little rug-rats sense Ice Cream and Cool Whip, they’ll be at your feet begging, and you’ll have to give them this…YUM!!!

Top with more Caramel and why not sprinkle some Chocolate Chips or Oreo Crumbs…just for the heck of it.

Oh, that looks DE-LIC-IOUS, if I do say so myself.

Now all you do is cover it lightly and put it in the freezer for at least 2 hours.  Remove if from the freezer 5 minutes before serving.  Cut into squares and top with Hot Fudge if you dare!

Ice Cream Sandwich Pie Recipe

Ingredients:

  • 1 Large Box of Ice Cream Sandwiches (quantity 20-24)
  • 1 Tub of Cool Whip (Large or Small, depending on how much you want)
  • 1 Jar of Caramel Sauce (12 oz)
  • Pecans or other nuts if desired (or chocolate chips)

Layer bottom of a casserole dish with Ice Cream Sandwiches.  Top with half of the Cool Whip and spread to smooth.  Top with a generous amount of Caramel.  Add nuts or chocolate chips if desired.  Place another layer of Ice Cream Sandwiches on top.  Spread with remaining Cool Whip.  Top with remaining Caramel (or as much as desired) and any additional toppings you would like (nuts, chocolate chips, Oreo crumbs…)

Lightly cover and freeze for at least 2 hours.  Remove from freezer 5 minutes before serving.  Cut into squares.  Top with Hot Fudge if you just need a little extra kick! :)
