Goin’ Granola

MORNINGS…

I am a bear, a grump, a grouch in the morning…every morning!   It’s not intentional.  I know that every day is a blessing and I should rise from bed each glorious day singing praises to the Lord, but it just takes me a while to put on a happy face.  The Proverbs 31 woman “gets up while it is still dark.” (vs 15), but I just can’t!

One time, about a year ago we had a conversation that went like this:

Preston: “Mama, you’re grumpy this morning.  It’s because you stayed up too late, isn’t it?  You stayed up too late because you’re nocturnal.”

After a few moments of deep thought Lilly Katherine said, “Mama, why are you a turtle?”

Oh, my confused little woman!  She’s so funny!

Anyway…MORNINGS…I don’t like them!  My sweet hubby has learned not to talk to me in the morning.

My kids HAVE NOT.

.

Usually Brad gets the maniacs their milk and breakfast while I try to pretend it’s still nighttime.  However, it often stresses Preston out if I’m still asleep at 7:20 and his lunch isn’t made yet.

.

All that’s to say that I try to simplify mornings as much as possible.  My kids often eat sugary, (bad) carb loaded cereal.  They love “cim-a-non crunch” (cinnamon toast crunch) but i really would like their little bodies to get a healthier start.  Granola bars are their favorite, but they’re expensive and they seem to be packed with more sugar than cereal.  Soooo, I’ve been making my own granola bars, thanks to the inspiration from a sweet friend of mine, Jana, and her wonderful healthy blog.

These granola bars are so yummy and good for you, and they are so easy.  Our whole family loves them, and you can change them to meet the desires of your fam.

Goin’ Granola…Granola Bars

The full recipe is at the bottom.  Here’s what you need:

Use 2 cups of whatever dried fruit/nuts you want to use.  In these granola bars, I used craisins, raisins, golden raisins, apricots, dates, and cherries (because that’s what I had in my pantry.)

Cut the larger dried fruit or nuts into small pieces.

In a large bowl, combine all the dry ingredients.

Then add the fruit and nuts of your choice.  (Look at those sweet little hands in the background trying to “help” hold the bowl.)

Now look at that sweet little face saying, “Uh oh, Mama!”

I’ve learned that you must have patience when cooking with 3 children.  Sometimes I do, sometimes I don’t.  AnnaLeigh was trying to stir the dry ingredients, and they got away from her.  We all laughed!  I don’t always laugh, but we really did have a good time making these granola bars.

Make a well in the center of your dry ingredients.  Add your remaining ingredients to the well.  (Little trick…measure and add your oil first.  Then measure your honey in the same measuring cup.  The oil makes the honey slide right out of the cup.)

Stir to combine.  Unless you have a magical stirring power that I don’t have, you will have to use your hands and sort-of knead it until it looks like this.

Put it in a greased pan or cookie sheet and press to the desired thickness.  I like my granola bars to be thin and even, so I use wax paper to mash it down and spread it evenly.

Bake at 350° for 15-20 minutes or until the edges start to brown.  If you like crispier granola bars, bake them longer.  I like them soft like a cookie!

Let them cool for about 5 minutes, but cut them while they are still warm.  These were pretty large – perfect for Preston, but too large for the girls.

After they have cooled completely, store them in an air tight container or wrap them individually.

I wrapped a few in wax paper, because we took a them to my sweet nieces and nephew.  I usually just throw them in a zip-lock because I’m lazy!

These really are wonderful, and I think they’re even better the second day.  They keep well, but they don’t last long around here.

Goin’ Granola – Granola Bars

  • 3 Cups Oatmeal
  • 1 Cup Whole Wheat Flour
  • 1/4 Cup Flax Seed Meal
  • 1/2 Cup Wheat Germ
  • 1 tsp Salt (I make it slightly heaping)
  • 1 tsp Cinnamon (cim-a-non)
  • 1/4 Cup Brown Sugar
  • 2 Cups Dried Fruit and/or Nuts (I just use fruit – LK is allergic to many nuts)
  • 1 Egg
  • 2 tsp Vanilla
  • 1/3 Cup Vegetable Oil
  • 1/2 Cup Honey
  • 1 Banana (Mashed)
  • Ginger, Nutmeg, Ground Cloves (If you have these ingredients on hand, sprinkle a little into the dry ingredients to add a little more flavor.)
  • 2 Tbsp Peanut Butter (see note below)
  • 2 Tbsp Applesauce (see note below)

UPDATE: I have made these granola bars several times, and I have realized that they need a little more moisture.  Lately, I have added about 2 Tbsp Peanut Butter and about 2 Tbsp Applesauce to the wet ingredients.  My advice is just add 1/4-1/3 cup of additional moisture in your wet ingredients…either applesauce, peanut butter, or another bananaIf you prefer harder, more crisp granola bars, do not add these additional ingredients. (How’s that for confusing?!?)

Preheat the oven to 350° and grease a 9X13 baking pan or a cookie sheet.  I prefer to use a cookie sheet, because I like my granola bars to be thinner.

In a large bowl, combine all the dry ingredients (Oatmeal, WW Flour, Flax, Wheat Germ, Salt, Cinnamon, Brown Sugar).  Chop large dried fruit, such as apricots, dates, prunes, etc into small pieces.  Add all dried fruit and nuts to dry ingredients.  Combine.

Make a well in the center of the dry ingredients.  Add Egg, Vanilla, Oil, Honey, and Mashed Banana.  Mix all ingredients well, using your hands.

Pat mixture into greased baking pan or cookie sheet.  I use wax paper to get it smooth and even.  I typically don’t spread it all the way to the sides of the cookie sheet.  Bake for 15-20 minutes, or until edges start to brown.  If you prefer crispy bars, bake longer.  You may have to use a spatula to pat the center down as it bakes.

Cool for about 5 minutes, then cut the bars while they are still warm.  If they cool completely they will be hard to cut.  After they are cool, store in an air tight container or wrap individually.

Friday Fav #4 –Germ Story

To go along with my germ theme of the week, this Friday Fav is GERM story #5!  This story is so repulsive that it’s one I will remember always.  It’s my “fav” germ story to tell, however one of my LEAST “fav” moments in life!

GERMS!  I don’t like them.  I think they’re gross!  I am a germ-a-phobe!  My daughter…is not!  If you missed my previous germ stories, you are welcome to read them…

And now, for the granddaddy of them all…for the grand finale…

I’m going to do the best I can to give you a visual of how this “went down.”  It’s hard to type it with the same expression and visuals , but I’ll do my best to give you the full effect!  Here goes!

Every time we go into a public restroom, I am CONSTANTLY saying, “Please don’t touch anything.”  This child of mine, she loves bathrooms.  Lilly Katherine thinks the “flusher is so cute” and the “little trashcan by the potty is so cute” and the “little door lock-er is so cute.”  She has a very hard time not touching these things.

.

Well, we were at a birthday party for my nephew, Garrett, at Putt-Putt.  Our local Putt-Putt was celebrating their 50th anniversary, and I can promise you that not ONE THING has changed in 50 years…or at least for the last 25 years!  Anyone that lives here can attest to that.

.

In the middle of the party, Lilly Katherine had to go to the bathroom, of course.  I wanted to make her hold it, just because I LOATHE public restrooms, but the outcome of that decision would not be favorable…nor was the outcome of this one.

.

We went into the “one-hole” restroom.  I repeated my mantra of “Do not touch anything!”  Then I put toilet paper on both sides of the horse-shoe shaped seat, like any good germ-a-phobe would do, and I sat my sweet little girl on that nasty, old potty.

.

Now, this may be too much information, but I have to give you the visual.  My baby is little and has to hold onto something so she won’t fall in.  What I do is pick her up, put her on the potty, then I stay right where I am and let her hold on to my legs.  That way she has support and can hold on to me instead of the toilet bowl to keep from falling in.

.

Well, sometimes (as she did this time) she bends over and pushes her head down by my legs to see how things are going in the potty.  I was asking her questions, when all of the sudden I realized her answers were sounding muffled.

.

After a split second of pondering that, I screamed, “WHAT ARE YOU DOING?  IS YOUR MOUTH ON THAT POTTY?!?!

.

To which she screamed back in confusion and fear, “I NOT TOUCHIN ANYTING!!!”

.

I (not really wanting to know the answer) asked back in HORROR, “I know, but were you LICKING THE TOILET?”

.

An innocent, “Yes, ma’am”

.

My sweet baby girl was LICKING what I would like to refer to as “The pee catcher”…you know, that space between the two sides of the seat.  That little gap.

.

HER TONGUE WAS ON IT!

.

IT WAS SALTY!

.

SHE WAS LICKING THE TOILET SEAT OF A NASTY, OLD PUTT-PUTT BATHROOM!  Who cares where it was, Wal-Mart or my own house, SHE WAS LICKING OTHER PEOPLE’S NASTY, NASTY URINE!

.

I ripped that child from the toilet and ran to the sink.  I started scraping her tongue, hoping and praying I had misunderstood what she was really doing.

.

I asked for clarification.  I had not misunderstood.  She really was LICKING THE TOILET…but in her defense, she was indeed NOT touching anything!

.

As little miss carefree skipped back to the birthday party, I walked back MORTIFIED trying not to throw up!  It makes me gag just thinking about it.  My sister-in-law, who is not at all a germ-a-phobe almost died when I told her.  Her response was, “Well, if she breaks out in purple spots, at least we’ll know why.”  Purple spots were the least of my concern.

Now, when we enter public restrooms, my mantra is, “Remember, don’t touch anything, and PLEASE DON’T LICK ANYTHING!”

.

The only good thing about this horrible moment in time is that I will make all her dates read this post before they take her out.  What boy in his right mind would want to kiss a real “potty mouth?” :)

Germs-The Vet

I mentioned a few days ago that Lilly Katherine licks everything.  This child of mine has always put things in her mouth, and at 4 1/2, she still does.  It’s not so much little toys or “choking hazards” that she likes to put in her mouth.  It’s more like whatever she’s holding or playing with will eventually end up in her mouth.  Hairbrushes, clips, her thumb, pillows, clothes, necklaces, sandal straps, baby doll arms and legs,…whatever.

.

Her mouth also seems to be the same height as a standard counter top…such as the counter at Chick-fil-A and our pediatrician’s office.   LK simply can’t just stand there and wait for me to pay, she must run her mouth from one end of the counter to the other…making sure to ingest as many kooties as possible.

.

Well, a few months ago we got a dog.

.

He had to go to the vet.

.

All three kids, the dog, and I went to the vet.

.

Smart!

.

Our Veterinarian has this large metal table that he puts all the animals on to examine them.  I’m assuming this is pretty standard.  This large metal table has a lip around the edge.  You know what that lip is for?  That lip is to catch urine when they put dogs to sleep.  That lip catches dog poop when a nervous dog does his business after they have to take it’s temperature.  That lip catches hair, dirt, WORMS, blood, and whatever else comes from dogs, cats, and other animals to prevent the bodily fluids from landing on the floor.

You know what else that lip is for?

.

It is the height of Lilly Katherine’s mouth.  It’s cold.  Lilly Katherine thought that lip was for her little mouth.

.

I turned around to see her whole little body swaying from side to side…then I realized her mouth was open and she was licking every surface she could reach as she swayed.

.

SICK!

.

As if people germs aren’t gross enough, now we’re licking a table that catches feces and urine from animals.  Yes, I might have freaked out a little when I saw her doing it.  Yes, she stopped immediately.  Yes, she licked the next counter top she encountered.  Yes, she’s somehow my healthiest child.

.

Still…that’s SICK!

On on completely different note…This has nothing to do with germs…Just has to do with my crazy Lilly Katherine…

.

Yesterday morning I was bathing the girls.  I was in a hurry, of course!  I was choosing their outfits while they bathed together.  I walked back in the bathroom to find LK splashing around with all this white stuff in the tub.  She was singing, “shake it up. Mix it up.”

.

THAT CHILD had taken half a roll of toilet paper and shredded it all in the tub.  It looked like egg drop soup in our bathtub.  When I asked her what in the WORLD she was thinking when she did that, her response was, “Well, the toilet paper was sitting right by the tub, so I just put it in here.  Look!”

.

Yes, dear!  I see it!

.

Well, I couldn’t drain it.  It would have stopped the tub up, so I used my wire mesh strainer in an attempt to fish little jiblets (is that a real word?) of soggy toilet paper from a tub full of toys and 2 children.  They thought it was funny.  I did not!

.

I got as much as I could out.  However, I couldn’t get it all.  I realized when I got them out of the tub that it left little “spit balls” all in their hair. This pic isn’t great, but it’s all I could get in my time crunch.

Good times!

.

Oh well, we survived and it really is funny when I think about it.  Though, not so much at the time.

Germs-Fast Food Playgrounds

This is GERM-week post #3.  Read #1 here and #2 here.  Then go take a shower!  The following stories are not about Lilly Katherine.  They are about Preston, but I couldn’t leave them out.

.

Indoor Fast Food Playgrounds. I am confident that there is no nastier, germier place on earth!  You open the door to the playground and you are instantly knocked in the face with a puff of very distinct smells…feet, sweat, and urine.

.

Who decided that fast food playgrounds needed to be indoors?  Outside playgrounds are so much better.  Kids can get their vitamin D from the sun, germs aren’t trapped and harvested in a petri-dish atmosphere, rain washes all the kooties away, the kids can scream and not disturb the entire restaurant, there’s no going IN and OUT of the playground door, there’s no running through the restaurant with bare feet.

I guess I’m not a very cool mom, but i absolutely loathe these stinkin’ indoor playgrounds, and I know I’m not alone…though I may be in the minority.

Here are two personal reasons why…

.

STORY #1:

When Preston was almost 2 we met a group of friends at McDonald’s.  My sweet friend (who is the antithesis of me when it comes to germs) was there with her 2 kids, and potty training her youngest.  At one point, an older boy came down the slide and said, “Some kid peed in the slide.”  My friend went into the slide, (it wasn’t too far inside) and she cleaned it with a wipe.  That’s when I realized that this was probably not an isolated incident.  I couldn’t imagine what went on inside that opaque plastic oversized hamster tubing.

.

We were having a lovely time until Preston decided he wanted to follow his friends up to the tallest tube…which led to the highest slide.  Preston got to the top and WOULD NOT come down.  He froze.  I could hear him crying, calling for me.  All the moms looked at me as if to say, “So, now what are you going to do?”

.

I sat.

.

I waited.

.

I thought, SURELY this kid is going to come down!  It’s just a slide.

.

No kid.  Just crying…screaming.

.

I was left with no choice.  I had to go where no man had gone before.  Okay, I had to go where no germ-a-phobe freak had gone before.  I had to climb to the tip top of that HORRIBLE oversized hamster tube.

.
Let me tell you something.  If you think it looks nasty from the window…If you think it looks nasty when you’re taking your kid from the bottom of the slide…If you think it smells like feet when you walk in the door…

.

YOU NEED TO GO TO THE TIP TOP OF THAT HORRID PLACE!

.

It was breathtaking, and I don’t mean in a good way.  I mean in a Seinfeld kind of way.

.

There were stains from who knows what up there.  There were pieces missing that shouldn’t have been.  There was sticky, smelly stuff slathered on every surface.  It was at least 30 degrees warmer in there and SO HUMID.  The air was thick and felt like sweat…little kid, puppy dog smelling sweat.

.

I climbed up as quickly as I could, grabbed my fearful little one, told him he couldn’t go in another hamster tube til he was 12, and slid down the twisty, twirly slide trying not to touch ANYTHING else!

.

My friends were all laughing.  They said, “I bet you take a shower when you get home!”  My response was, “Ladies, I’m heading there RIGHT NOW!”

.

STORY #2:

Preston was not an easy potty trainer (to say the absolute least!)  One day we were at Chick-fil-A with friends and P was in the playground (I guess I didn’t learn my lesson the first time).  I went to get him and when I opened the door, my child was standing BAREFOOT in a HUGE puddle of yellow liquid.

.

I was NOT happy!

.

I looked at him and started fussing, “Preston, why did you tee-tee on yourself!  I can’t believe you did this!  I had just asked you if you needed to go!”

.

Just then a precious friend that knows what a germ-a-phobe I am said, “I was trying to move him before you saw him.  It’s not his.”

.

What?!?!

.

“Preston didn’t have an accident.  Someone else did, and Preston is just standing in it.”

.

LOVELY!

.

After I gagged, I yanked my child from the puddle of someone else’s pee and we went straight to the bathroom.  I bathed that child as well as I could in the little restaurant sink, then we went home to sanitize from head to TOE!

.

ATM

LK: “Mama, what does A-T-M spell?”

Me: “It’s a machine called an ATM machine and it stands for Automated Teller Machine.”

LK: “What is that?”

Me: “Well, it’s a machine that gives you money…if you have any money in the bank.”

LK: “We have money in the bank, don’t we?  Daddy collects money.  Daddy has a money collection.  Kind of like Samuel’s bug collection, but Daddy has a money collection.  And Samuel’s bug died.”

Me: “Yes, just like that.”

.

I don’t know where Brad’s stashing this “money collection” but I would sure like to see it.  I think it’s probably buried under the  “money tree” i thought my parents had.

.

Germs, Germs, My Invisible Dog

When I was a kid, my most favorite “album” was Down by the Creekbank, and my MOST FAVORITE song was,  “Germs, Germs, My Invisible Dog.”  I sang it often.  I sang it loud and proud!  I still remember every word, and think of it all the time.

.

We have a few great cassette tapes from when I was a kid, on which I recorded many songs and deep thoughts.  The tapes are very incriminating, and my brother and sister now have proof of a few manipulative, not-very-kind, older sister moments.  We get a good laugh about all of them now, but I truly see LK in everything I say on the tapes…from singing at the top of my lungs to screaming at my brother for touching the button on the tape recorder which messed up my beautiful singing.

.

I’ll try to post the song tomorrow.  I know you’re waiting in suspense! :)

This story isn’t horrible, but it just gives you a good example of how care-free my middle child is.  She is always looking for an opportunity to have fun.  Lilly Katherine is a joyful little woman, with not a care in the world.  (Side note: I TRULY thank the Lord so often that she is so full of life and full of joy!  It is so much fun to raise a child that finds joy in everything!)

.

A few weeks ago we were eating at a local restaurant.  LK and I had to run to the restroom.  We were in a large stall together and she asked me what a somersault was.  A smart mom would have said, “I’ll show you later.”  I, however, began explaining, “You know, a somersault is where you put your hands on the ground and then your head, then you flip over.”

.

Before I knew it, that child had her hands down, head on the ground, and was doing a somersault on the floor of the public bathroom stall.  Due to my excessive screaming, she stopped mid-roll.

.

Then she was confused when I told her she had to wash her hands.  She hadn’t touched anything.  My sweet thing is OUT OF CONTROL! :)

.

Germs, Germs, My Invisible Dog!

Germs!

I am a total germ-a-phobe!  I don’t like germs!  Indoor playgrounds give me the heeby-jeebies!  Water fountains stress me out!  Toys at Doctors offices are totally off-limits.  I am NOT afraid of dirt?  No!  I’m fine with dirt.  I think kids need to play in the dirt.  I just don’t like germs…kooties…from other peoples’ bodies!

.

I am “that mom” that puts a shopping cart cover over every shopping cart and high chair.  I sanitize tables with anti-bac wipes or use table toppers.  I carry “magic soap” and make my kids use rub it all over their hands…if, and only if, a sink isn’t available, because I believe soap and water are the best option.

.

Well, God has this really funny sense of humor.  If there’s something you’re grossed out by, He’ll give you a child that enjoys it.  As much as I like to be free from germs, Lilly Katherine looks for ways to get as many kooties on herself as possible.  She loves to be dirty, she loves to touch things, and she especially loves to LICK things!

She always has to have something in her mouth…a thumb, a pen, a piece of paper, her hair, her shoe…something!

.

This weekend I’ve been thinking of several germ-y stories, so I decided I would document some nasty germ stories so I would remember them as my little maniac grows up and continues to love all things dirty.  I also think you might get a kick out of them.  I’ll post one or two a day…I think that’s all I can handle.  It’s probably all YOU can handle.

.

This is my plan:  When Lilly Katherine is a teenager and the boys start knocking on our door, I’ll let them read these stories.  This should eliminate any desire they have to kiss my daughter!  (insert evil laugh)

.

The germ-pondering began after a simple conversation with my father last week.  LK went with my parents on a quick 24 hour trip.  My mom had a meeting out-of-town, so they took LK with them.  I called Wednesday morning to see how she was doing and the conversation went like this:

Me: “Hey, how’s Lilly Katherine?”

Dad: “She’s great!  We’ve had a great morning so far.  We’ve already been to the hotel pool and the hot tub.  The pool was too cold, so we just hung out in the hot tub.”

(First of all, I’m not a fan of public hot tubs.  I think this goes back to something I saw in our apartment hot tub in college-gross!)

Me: “So what’s she doing now?”

Dad: “Oh, she’s splashing around in the tub.”

Me: “She’s SITTING in the HOTEL BATHTUB?”

(When we go out of town, I make my kids stand and take showers with me.  I can’t handle their little bottoms on that bathtub floor.)

Dad: “Yes, she’s taking a bath.  She’s fine, Kate.”  (then…my dad to Lilly Katherine) “Oh, Lilly Katherine, don’t do that.  Get that away from your mouth!”

Me: “What?  What is she putting in her mouth?”

Dad: “Well, she just drank a little bath water out of a cup that she found in the depths of the swimming pool.”

Me: “WHAT?!?!  Are you kidding me?  Please get it away from her and get her out of that tub!”

(G-R-O-S-S!  A cup found in the pool…you allowed her to pick up…and take back to the room…and now she DRINKING HOTEL BATH WATER OUT OF IT?)

.

I guess I can’t be too critical of my father.  Last summer at the splash park Lilly Katherine picked up an empty chocolate milk carton, and I (of course) told her to put it down.  She asked if she could play with it and fill it up with water since I forgot to bring a bucket.  I tried to relax and not be such a germ-a-phobe and I reluctantly said, “Yes, but DO NOT DRINK OUT OF IT!”  About 5 minutes later she was chugging down a big gulp of splash ground water from her chocolate milk container.  GROSS!!!

.

I know, I’m a little high strung about germs.  Funny thing is that people always say, “You know Lilly Katherine will probably be the healthiest of the three.”  So far, she is!  Preston and AnnaLeigh get sick much more often than my little germ-lover! :)  I don’t care, I still chose anti-bac over kooties!

Friday Fav #3-Chick-fil-A’s Peppermint Chocolate Chip Milkshake

In case you haven’t figured this out, I like to EAT!  I enjoy it.  It makes me happy.  I love good food.  I love healthy food.  I love junk food.  I love FOOD!

I don’t eat ice cream when my kids are awake, because ice cream turns Preston into something super-human.  It literally makes him lose his mind.  You can see the sugar start bubbling through his veins the instant it touches his tongue.  I’ve been told he looks like a racquetball in a small court.  It’s the truth!

Lions and Tigers and Bears, Oh My!

Preston was home from school Monday, so we spent the morning at the ZOO!  We haven’t been in so long, and he has always loved our wonderful zoo.  This was the first time AnnaLeigh was really old enough to enjoy it.  We weren’t there long, but we ran into LOTS of friends!  Brad took a few hours off work and joined us, which was an extra special treat to the maniacs!

.

As I was looking through my pictures, I realized that I have very few pics of the zoo animals…mostly pics of my animals.  Also, almost every picture is of the maniacs’ backs…very few faces.  I guess that’s because I was trying to keep up with them.  We had a great time, and it was a beautiful day to be outside enjoying God’s amazing, unique creation!

One day Lilly Katherine is going to fall into the Giraffe area.   That girl likes to get right to the edge of the ledge.  Gotta love that little maniac!

AnnaLeigh is saying in a very sassy voice, “Ha-eye!” (HEY!)  The girl has a LOT of spunk!

Preston sat in an elephant’s foot print.  The sun was really bright, and he was struggling to look up.

Lilly Katherine started waving to the Giraffe…

AnnaLeigh saw it and got SO excited!  She started waving and screaming, “Hey, Raffe!”

Then she started a full blown conversation with Mr. Giraffe, “How a you?”

Sweet maniacs!

The kids love the Otter Exhibit.  It was my favorite exhibit growing up, too.  The otters were quite playful, but the water was so murky that you can barely see them.

The maniacs got really lucky on this trip, and they got to feed the fish…for real!  I usually forget to bring quarters, and my children have to crawl around on the wooden dock and stick their little fingers in between the slats to get the fish food other “good moms” have dropped.  This time I actually had TWO quarters, so the maniacs thought they hit the jackpot!

It is TRULY a miracle that no heads got stuck between those bars…and no shoes came off in the water…this time!

Monday was a great day.  We loved being together as a FAMILY!  I wish I had half a brain to take a FAMILY picture, but I was too busy sneezing (thanks to my newly developed allergy problem) to think. :)

Little Cabin in the Woods

Brad has been busy listing several great houses lately.  This one because it’s so unique, I just had to post it!

Look at this cute little cabin in the woods!  I have always wondered what A-framed houses looked like inside…so fun and so cool!

Don’t you love the slanted walls?!  It reminds me of the crooked old house that Six Flags used to have…that I NEVER understood.  How did water or oranges roll uphill?  My dad always tried to explain it, but my mind couldn’t grasp it.  Anyway…

Loft upstairs.  I have a thing for lofts.  I’ve always wanted one, and this loft is great!

Need a lake-house?  This great A-frame house is fully furnished and within walking distance of a lake, and it’s only $75,000.

With a little paint, this house could be so cute and so fun!!!

Yo-Yo’s and My Demise

This fall/winter I have enjoyed the fashion trend of wearing fun, long shirts with skinny jeans, leggings, or “JEGGINGS!”  This combo has become my uniform!  I have embraced jeggings with all 62 inches of my being!  I’m pretty sure that jeggings, long shirts, and knee high boots aren’t made for people that are 5’2″, as my legs probably looked 4 inches long.  However, I’ve worn it…I’ve LOVED it!

Jeggings, according to Wikipedia (yes, I googled the definition of jeggings) are

“a true cross between denim and legging material. “Denim jeggings” are essentially a denim fabric with the elasticity of a legging.”

Did you see that last phrase?  “elasticity of a legging!” Yes, friends, that is why I have embraced jeggings!

HOWEVER…

A few weeks ago I decided I wanted to wear real jeans and a real shirt.  I wish you could have seen I am so glad that no one saw me jumping up and down like a fool, trying to squeeze myself into my “regular” jeans.  They must have shrunk.  So, I tried another pair…

ARE YOU KIDDING ME?

How do my jeggings fit so well, and my real jeans squeeze my guts out?  Well, I guess that elasticity thing was a big trick!  I was doing a huge disservice to myself by wearing jeggings every day!

.

Jeggings aren’t the only problem, though.  This winter, Yo-Yo’s have been my most favorite snack…and by snack I mean “dessert” that I have chosen to snack on morning, noon, and night!  I can’t tell you how many batches I’ve made, but I can tell you that my Yo-Yo eating addiction has not helped the whole jean situation.

Has it stopped me from making more, though?  NOOOOO!  In fact, it only made sense for me to make a batch so I could take pictures for this post…right?  If you’ve never had Yo-Yo’s, you truly haven’t lived.  They are so so so easy to make, and amazingly delicious!  I’ve been told they taste like Reece’s or Butterfingers.  Either way, they’re just GOOD!

So, with the combo of jeggings every day and Yo-Yo’s every day.  I have been the cause of my own demise.  Guess I’ll be running another half marathon soon, so I can get rid of some of these Yo-Yo’s!  I’m not too worried.  Every bite was worth it!

Yo-Yo’s

(Entire recipe is at the bottom of post)

You only need 3 ingredients:

Spread a layer of creamy peanut butter on a Ritz cracker.

Top with an additional Ritz cracker.

Melt one flavor of Almond Bark in a microwave safe bowl until smooth.  Do not overheat or it will melt your peanut butter.

Place Ritz-peanut butter sandwich in the almond bark.  Coat the bottom cracker with chocolate.

Flip crackers over to coat the other side.

Pick up with fork and shake off excess chocolate.Place on wax paper and try to resist eating one while they’re still wet.  They really are better when the chocolate has hardened.  (Trust me, I know.)

Just for an added touch, I like to “decorate” the top.  Pretty Yo-Yo’s are more fun to shove in your face.  Melt your other Almond Bark (if you choose to do this step).  I think a small fork makes the cleanest stripes.

Just dip your fork in the chocolate and start slinging it!  Literally.  I just sling it around and most of it lands on the crackers.

YUM!  What’s not to like about this?

Oh…now that’s better!

Yo-Yo’s

Ingredients:

  • Ritz Crackers
  • Peanut Butter
  • Almond Bark  (I use both chocolate and vanilla, but you only need one flavor)

Spread creamy peanut butter on one cracker.  Top with another cracker.  Melt the Almond Bark in the microwave.  Stir often and do not overheat, or it will melt the peanut butter.  Dip Ritz sandwich in melted almond bark, turning to coat.  Shake off excess chocolate and place them on wax paper to dry.  If you want to make them pretty, melt a different flavor of almond bark to decorate the top.

I’ve even been known to buy a box of Ritz Bitz to make Mini Yo-Yo’s!  ENJOY!

High Def

Friday afternoons we typically meet friends at Sonic to play.  Today was a beautiful day to run in the sand with friends.  On our way to Sonic, Preston asked, “Can we do windy?”  (Translation:  Can we roll the windows down?)  I thought it was a great idea!  As I rolled the windows down, my 7 year old child looked outside and said, “Look, Mama!  It’s like it’s HD now!”

Maniac!  The child doesn’t even watch that much TV, but he does love his sports.  HD is important when you’re watching football…or so I’ve been told.

The Very Hungry Caterpillars Turn 2!

Ashley (my sister) and I decided to have AnnaLeigh and Truett’s birthday parties together…because they are 5 weeks apart…and we were inviting all the same people…and it just made sense…and she’s WAY more organized than I am so I knew she would keep me on track!

.

It was hard to come up with a neutral birthday theme, so I copied (and I mean COPIED) my friend Kristen Nelson’s idea of The Very Hungry Caterpillar.  It was such a precious party, and AnnaLeigh and Truett LOVED it!

Just in case you forgot what The Very Hungry Caterpillar ate…

He ate through 1 Apple, 2 Pears, 3 Plums, 4 Strawberries, and 5 Oranges…

He also ate through one piece of chocolate cake

one ice cream cone (i didn’t get a picture of the ice cream),

one pickle, one slice of Swiss cheese, one slice of salami, one sausage

one lollipop, one piece of cherry pie (empty bowl was for ice cream cones and The Very Hungry Caterpillar didn’t eat m&m’s, but we did)…

The Very Hungry Caterpillar Birthday C ake (using my favorite icing recipe):

When I was almost finished with the cake, I walked out of the room for a few minutes.  I heard my sister yell, “Uh, Kate!  You better get in here!”  I walked into the kitchen to find that our stinkin’ dog (Sam) had eaten a chunk out of the right side of the caterpillar’s head.  I would have DIED if he had eaten it all, but he was only able to reach that one little part…thank goodness!

The Caterpillar had to have a head, and I didn’t have time to make a new one, so I patched it with icing and decided I would just throw it away after the party.  My children, however, warned every guest, “Don’t eat the head of the cake!  Sam licked it!”…which of course grossed everyone out.  For some reason most people opted for chocolate cake as their dessert instead of cupcakes.  Hmmm…I wonder why?!?!

Ash and I made their caterpillar shirts together.


I was able to re-use the yellow pants I made AnnaLeigh for her first birthday by adding the green ruffle and ric-rac.

Preston made a caterpillar for the mantle…with a smiley face on it.  He was so proud of his decorating skills.

Somehow I forgot to read The Very Hungry Caterpillar to the children at the party, but they read it to each other.

Sweet Truett was so tired that he laid down on his balloon and let AnnaLeigh read.

We invited everyone to sign The Very Hungry Caterpillar books for AnnaLeigh and Truett as a “guest book” and they got to take home little treats “In case they were still hungry.”

Friday Favs-La Tortilla Oven

I think I am going to start a new little blog tradition called “Friday Favs!”  We already have the Friday tradition of  “DONUT DAY!!!” which is of course a FAV, so why not add another tradition.  I think I’m going to try to list an item, a product, an idea, a moment, etc…that is a favorite!

La Tortilla Oven

It is the best tortilla warmer ever!  The tortillas stay warm throughout our entire meal.  This is smaller than those styrophome or plastic warmers with lids.  It really works!  I used it again this week to make homemade taquitos and it just made me happy!

Lazy!

What in the world makes my lazy, messed-up brain think that it’s easier to DIG through these laundry baskets for a WEEK every time I need a pair of socks – instead of sitting down for 10 minutes to fold them?  Am I the only person that does this?

And what makes me think that posting this for all the world to see will help?

I could have had them folded by now.  Off to fold, friends!  More laundry in store for me tonight, and I will have to use these baskets.

Saturday Night Fever

SNOW DAY!

We were supposed to have a birthday party today for a certain little 2-year old and her soon to be 2-year old cousin.  Of course, we had to postpone because she is sickly.

.

Let me back up…I stayed up until 3 am Thursday night (which is totally normal for me) to make AnnaLeigh’s outfit for her birthday party.  It started snowing at midnight, and while I sewed I watched the snow fall.  I was excited just thinking about telling Preston he had a SNOW DAY!  There were very few snow days here when I was growing up, but they were all VERY exciting!

.

Well, at 5:14 (after going to bed at 3), my phone rang.  It was a recording to tell me school was canceled.  Really?  5:14?  I managed to fall right back to sleep…until I heard AnnaLeigh crying at 5:30.  It was a sad little cry, and I picked a limp little fever-bug out of the bed.  She was miserable.  She went to bed Thursday night happy and full of life, but she woke up so pitiful.

.

P and LK woke up bouncing!  They were so excited to see snow, and P was ecstatic that school was canceled!  His exact reaction was “Yes!! No spelling test!”  (So funny!)

.

Brad took the big kids outside and they played for hours.  I stayed inside and held a sick baby for hours.  I could hear them giggling and screaming through the windows while I held and rocked and loved on my sleeping little angel.  I took a pic on my phone, so it’s a poor picture, but so sweet.

Nana and Granddear walked to our house and they had a snowball fight.  Then…they got the 4-wheeler.  Brad wanted to pull them around the block behind the 4-wheeler.  He got the awesome idea that the best way to do it would be to stick all of them in a BABY POOL and have them hold a rope.  (Please notify Jeff Foxworthy!)  I wish I had seen this…probably better that I didn’t.  For some odd reason, the redneck baby pool idea didn’t work.  Hmmm.

Our sweet neighbors provided my crazy hubby with a sled.  Brad and Granddear drove the kids around the block all morning.  LK rode on the 4-wheeler and they pulled P behind it on a sled.  They all had a blast, and Brad assured me it was “safe.”  His comment when I expressed my mom-wisdom was, “Babe, we never even got out of second gear!”  Whatever in the world that means!  All I know is that Preston had such a great time!  I’m thankful my babies have a daddy and grandfather who are willing to get out there and have fun them!

Makes me cold just looking at the pics!  I won’t lie, I was happy to have a reason to stay in my warm house! :)

Last night both girls went to bed with fever.  This morning they were all up by 6.  Lilly Katheirne woke up very early because she saw a 4-eyed shark swimming on her ceiling with it’s mouth WIDE open.  She turned the light on to wake Preston up to make sure it was gone.  Then they made sure they were loud enough to wake AnnaLeigh up, too.  The good news is that they all seem to be feeling better.

We’re planning on having AnnaLeigh and Truett’s Hungry Caterpillar birthday party tomorrow.  All I know is that the Very Hungry Caterpillar ate through a lot of very expensive, not-in-season fruit and we WILL have this party.  I cannot let these plums, strawberries, and watermelon go to waste!

Sopapilla Cheesecake

This is part 2 of my previous post.  This is the UNhealthy recipe to follow up the healthy recipe.  I believe life is all about balance. :)

In Texas we eat Mexican food.  Actually, we eat Tex-Mex, but whatever you call it, it’s GOOD!  We have to get our fix at least once a week or we’ll wither away and die…or something like that.

.

Our favorite Mexican food restaurant serves fresh, hot sopapillas for dessert.  Instead of fresh, hot sopapillas, I make something equal in yumminess…fresh, hot Sopapilla Cheesecake!

Sopapilla Cheesecake

There are only a few basic ingredients.  This recipe is so easy and quick.

Combine Sugar and Cream Cheese.

Mix well.  Add Vanilla.  Mix again.

Place one can of crescent rolls on the bottom of a 9 X 13 pan.  Pressing seams to seal.

Pour cream cheese mixture on top of the crescent rolls.

Top with additional can of crescent rolls.  Pour melted butter on top.  Sometimes I make a low-fat version of this…I cut the butter from 8 Tbsp (a whole stick) to 6 Tbsp.  Doesn’t that make you feel better?!

Combine cinnamon and sugar.  Sprinkle on top of the butter.

Bake at 350° for 25 minutes.

DISCLAIMER:  It tastes MUCH better than it looks!

I got the bottom a little more done than I like.  I think doughy is always better than brown!

Recipe for Sopapilla Cheesecake

Ingredients:

  • 2 Cans Crescent Rolls
  • 2 (8 oz) Packages Cream Cheese
  • 1  1/2  Cups Sugar (Divided)
  • 1 tsp Vanilla
  • 1 Stick Butter
  • 1 Tbsp Cinnamon

Cream 1 Cup sugar and cream cheese.  Add vanilla and mix again.  Place one can of crescent rolls (pressing seams) on bottom of greased 9X13 dish.  Pour cream cheese mixture on top of crescent rolls.  Place second can of crescent rolls on top of cream cheese mixture.  You may need to roll the crescent rolls out on with a rolling pin to seal seams before placing them on the cream cheese.  Pour melted butter on top of crescent rolls.  Combine 1/2 cup sugar and 1 Tbsp cinnamon.  Sprinkle on top of the butter.  Bake at 350° for 25 minutes.  Take it out when the bottom is slightly brown.  Don’t cook too long or butter will taste burned.

Italian Tortellini Soup

I promised to post my yummy, yummy, not very healthy very unhealthy dessert from last week.  I figured I would balance it with warm, comforting Italian Veggie Soup!  I’m into veggies right now…and soup…and chocolate…just not all together!

Plus, when it feels like it’s 30 below outside, you’re SUPPOSED to eat soup for dinner!

Let’s do healthy first!  I’ll post the dessert recipe tonight!

I got this recipe from a fancy little cookbook I got in college…you know, the kind they sell at the grocery store check out counter.  There are several recipes in here I still love to use.   Plus, I love what it says at the top of the cookbook, “A photo of every recipe!”  That’s a MUST for me!

Italian Garden Tortellini Soup

You will need the following…PLUS KETCHUP and GARLIC!  (I forgot to put them in the picture)

Chop Bell Pepper, Eggplant, and Zucchini

Add bell pepper, eggplant, and zucchini to olive oil.  Saute about 5 minutes.

Add chopped tomatoes, broth, garlic, oregano, basil, and ketchup.

I didn’t have 2 cans of beef broth, so I used one can of beef broth and some frozen chicken stock I had made.  Use whatever broth you have on hand.

Bring to a boil.  Reduce heat.  Cover and simmer 5 minutes.

Add Tortellini.  Cook an additional 10 minutes (or according to package directions).  Add salt if needed.  Serve with Parmesan cheese.

Italian Garden Tortellini Soup

Ingredients:

  • 1 Tbsp EVOO
  • 1 Medium Green Bell Pepper, chopped
  • 1 Medium Eggplant, chopped (don’t peel)
  • 2 Medium Zucchini, chopped
  • 2 Medium Tomatoes (I used 4 Romas), chopped
  • 2-3 Cans Ready to Serve Beef Broth (or chicken broth if that’s all you have)
  • 2 Cloves Garlic (minced)
  • 1 tsp Basil
  • 1 tsp Oregano
  • 4 tsp Ketchup
  • Salt and Pepper to taste
  • 1 package refrigerated Tortellini…OR…1/2 cup dried cheese-filled Tortellini

Heat EVOO in Dutch oven or large pot and add bell pepper, eggplant, and zucchini.  Cover and cook over med-high heat 4-5 minutes.  Stirring occasionally.  Chop tomatoes.  Add tomatoes, broth, garlic, basil, oregano, ketchup, salt and pepper to veggies.  Bring to boil.  Reduce heat and cover.  Simmer about 5 minutes.  Add tortellini and cook an additional 10 minutes or according to package directions for tortellini.  Sprinkle with Parmesan Cheese.

Weekend Update

This weekend was rather uneventful, and actually pretty routine.  Brad worked most of the weekend, which is often the case in the world of Real Estate.

We are thankful he’s busy!

He took a break to coach Preston’s basketball game Saturday.  Then he got home just in time for a little Sundown one-on-one with his favorite player.


After church Sunday we went to eat with Ashley and her crew.  It was a pleasant day and we decided that we would eat outside at Jersey Mike’s…and then let the kids run wild in the little strip of grass beside our table.  It was PERFECT for our maniacs!

  1. I was born in Greenville, Mississippi and I loved spending my summers there as a child/teenager.

  2. I am 25% Italian, 25% Lebanese, 100% Southern!  I love homemade Italian spaghetti sauce, eggplant parmesan, and cannoli.  I love Lebanese stuffed grape leaves, kibbee, and tabouli.  I love Southern style grits, chicken fried steak, and fried okra!  I just like FOOD!

  3. I don’t use calendars…it’s a problem!  I’ve missed or messed up many a birthday party! (SERIOUSLY…as I was typing this I got a text from my friend Elicia that said, “Where are you?  I’m going to eat your piece of cake!”  I MISSED ANOTHER BIRTHDAY PARTY TODAY!!!  i truly can’t believe the irony of receiving this text as i was typing that!!!

  4. I live less than a mile from my parents…less that half a mile from my in-laws.  Wouldn’t trade it for the world!

  5. I’m a MESS!  A serious mess!  I like having a clean house…I just can’t seem to get it there.  Keeping house is NOT my strength!

  6. In 5th grade I had a bike wreck, and I had a scab on my elbow.  This crazy boy sat next to me and he used to draw on the scab.

Leftovers…a NEW meal

We eat leftovers.  Food doesn’t get thrown away intentionally around here.

Occasionally food gets taken to our extra fridge which we often refer to as “The Land of the LOST!”  Once food goes there, it often doesn’t return without a little fuzzy coat on it.  One time I let a fruit salad get so nasty that I REFUSED to clean the bowl.  I had decided I was going to be wasteful, but save myself some gagging…I was just going to throw the whole bowl away.  Being so wonderfully frugal, that wasn’t an option for Brad.  He took it outside and power washed it in the driveway.  GROSS!

So that little aside has nothing to do with this post.  In fact, erase it from your memory so you can focus on non-molded, yummy food. :)

I made grilled veggies and a pork loin Monday night.  Tonight I needed a fast meal before church, and I remembered I had some leftovers from Monday.  I didn’t want to serve the same meal, so I just reinvented it a little.

I made veggie pasta!

.

Chop the grilled vegetables up a little smaller.  Also cut the pork loin into bite size pieces.

Throw the veggies in a skillet with the following:

Small Can of Tomato Sauce

Can of Diced Tomatoes

1 tsp Basil (or handful of fresh basil leaves if you have them)

1/2 tsp Oregano

1/2 tsp Garlic Powder

Bring to a boil.  Add the chopped Pork Loin (or whatever meat you grilled with your veggies).  Cover it and let it simmer for about 5 minutes.

As it simmers, boil a package of Thin Spaghetti.

If you think that chopping your veggies with the end of your spatula while they are simmering (and while you’re frantically preparing dinner because you’re late for church) is a good idea, then you might want to wear an apron…so you don’t look like you killed someone.

When the pasta is cooked to your satisfaction, drain it and toss it with the veggies.  Add 1/4 Cup Parmesan Cheese.

This gives you a completely different meal, and takes only 10 minutes!  Plus, you use your leftovers so they don’t get stuck in the “Land of the Lost!”

We are all like GRASS!

Today was a great day!  I’ve been trying to be productive.  It’s a new thing for me!

.

The Lord is teaching me some valuable lessons this year through BSF (Bible Study Fellowship).  Every year I have different convictions, but this year I am actually going to try to act on my convictions.  (SHOCKING!  I think that’s WHY the Holy Spirit CONVICTS us!  I’m a little slow at times!)

.

I was very convicted that television needed to go…temporarily.  However, I have really enjoyed not having TV in my life the past few weeks.  I have decided to continue with my New Year’s Resolution to give up that great big TIME SPONGE and I would encourage you to give it a try.

.

I have also started to realize that so much of what I do in these early years shapes

THE REST OF MY KIDS’ LIVES!

Talk about pressure!  I am far from the perfect mother…in fact just typing that is laughable! (haha!)  But I do love these little maniacs and I want the very best for them! One day they will have kids (which would make me a grandmother, and the thought of that stresses me out, but…) they will either blame their mistakes on me or they will realize I loved them, prayed for them, taught them, and trained them with Godly wisdom and discernment.

A verse we studied today at BSF was Isaiah 40:6-8

.

“All people are like grass,

and all their faithfulness is like the flowers of the field.

The Grass withers and the flowers fall,

because the breath of the LORD blows on them.

Surely people are grass.

The grass withers and the flowers fall,

but the word of our God endures forever.”

I am a very visual person.  This is how I read this verse…

We are all like the grass.

.

We might be grass that is starved of nutrients and sunlight (the WORD of God) and we will still grow, but we won’t thrive.  We will be weak, puny, unproductive, and leave behind few seeds.  We will wither and die and leave very little to this earth.

.

Or we could be beautiful, lush, thick, green grass that is fertilized, watered, and in full sun (reading, memorizing, studying, living the WORD of God).  We will be strong, producing many flowers of faithfulness.  They will be beautiful and healthy, releasing many seeds to the earth.  Even the strong, nurtured flowers and grass will die, but they will leave behind many healthy seeds.

Only God is eternal, but our actions do make a difference FOR GENERATIONS!

.

I am learning over and over this year that there are several things I need to be doing with my babies…planting seeds in their little hearts…and strengthening mine!

.

*Scripture Memory

.

*Bible Time as a family.  We have always read a short Bible story before bedtime, but since Preston has been in all-day school, we’ve gotten lax because we want him in bed on time.   (again, priorities!)

.

*Praying about issues as they arise.  Praying together as a family.  Allowing my babies to see my prayers about them as individuals.

.

*Keeping my Bible open so they see that it is important to me to read God’s Word!

.

We are so temporary.  The Lord is so constant, permanent, ETERNAL!  I need to be focussing on things that are ETERNAL!  I guess that means that for now, Cupcake Wars, Everybody Loves Raymond, The Office, and The Real Housewives would probably not fall into that category.

.

This post may seem like a long ramble, and it kind-of is.  I just want to document my thoughts, let this be a reminder to myself, and and encouragement to other moms and dads to focus ETERNALLY.  For our sake, for our kids’ sakes, for their kids’ sakes.  What we do now won’t last forever, but it will effect forever!

Finally, A Healthy Recipe!

I love to cook.  I cook as often as possible, and I always want to invite people over to eat with us.  Often we invite our parents because my house is usually in no condition to entertain.  Sad but true.  The way I see it is this…If I’m going to spend all that time and energy cooking a good meal, I want people there that will eat and enjoy it!  If I have food, I’m happy to share it.  Plus, sometimes my 3 maniacs don’t offer the words of affirmation I desire after slaving away for hours.  Please refer to the broccoli casserole story from yesterday.

I think eating together at the table as a family is extremely important.  I also firmly believe in cooking “real” food, not over-processed fake food.  However, there might be a Totino’s Pizza or two in the freezer for emergencies, but I try to feed my kids “the good stuff.”  I want to make sure my kids are eating their fruits and veggies.

.

I love foods that are healthy, but I still like junk!  I love sweets.  LOVE SWEETS!  If you don’t believe me, click on “Real Good.”  If I ever found out I was diabetic, I think my world would come to a very hungry, depressed, unsatisfied, end (not to be dramatic).

.

Anyway, I’m going to share the wonderful and very healthy veggies I made for dinner last night in this post.  Later I will post the wonderful and very UNhealthy dessert I made Saturday night.  I love them both equally…but differently.  Make sense?

I have always had a very strong admiration and love for The Pioneer Woman, but now that I’ve started blogging, I am pretty sure she’s absolutely amazing.  The woman must not sleep a wink.  If you haven’t read the blog, you should.  If you do, you’ll be hooked.  Don’t say I didn’t tell you!  I love the way she documents her recipes with pictures and I have tried to emulate that, but it’s tough…and sometimes I forget…and I’m slow…and I have these little people hanging on me…and, just don’t make fun of my poorly colored, fuzzy pictures.  I’m still learning.

Grilled Veggies

Use whatever vegetables you like.  Sometimes I just use 3-4 veggies, other times I use anything I have.


This time I used:

2 Zucchini

2 Yellow Squash

1 Onion

1 Carrot

1 Sweet Potato (Red potatoes are great, too, but cut potatoes very thin)

2 Roma Tomatoes

Hand Full of Cauliflower

Hand Full of Broccoli

1/2 Bell Pepper (my kids don’t love the taste of cooked bell pepper)

1 Small Carton of Mushrooms

Marinade:

3-4 Tbsp Extra Virgin Olive Oil

3-4 Tbsp Balsamic Vinegar (I like a strong taste, but use less if you prefer mild)

3-4 Cloves Garlic, Minced

1 tsp Montreal Steak Seasoning

1/2 tsp Italian Seasoning

1 tsp Salt

1/2 tsp Pepper (I use Garlic Pepper, but either will work)

.

Chop vegetables into bite size pieces.  Put in large bowl with lid that seals tightly.  Add remaining ingredients.  Place lid on and turn bowl over several times to combine ingredients.

To Grill:

I love my handy-dandy grill basket and I highly recommend getting one if you don’t have one.  I just coat it with “Pam for Grilling” and pour my veggies in.  Grill over medium-low heat until tender/crisp, stirring every 5-8 minutes.  I prefer mine more tender/soggy, so I cook them for about 30 minutes.

To Roast:

(If you don’t want to turn the grill on, this is an easy alternative.  Don’t grill, roast!)

Preheat oven to 350°.  Place veggies on a large cookie sheet or in a 9X13 dish.  Place in oven for 45 minutes – 1 hour.  Stirring occasionally.  You may want to use less Balsamic if you plan to roast.

Bright, Bright, Sunshiny Day!

It was GLORIOUS to see the SUN on Saturday.  It’s been so long since I’ve gotten my Vitamin D fill from that wonderful ball of fiery gas the Lord made.  It was exhilarating to stand in the sun and feel the warmth on my face and arms.  The kids were just as excited as I was.  They kept saying, “Isn’t it such a pretty day?”  We played outside and enjoyed the weather for as long as we could.

.

Sweet Brad was working all day, so he didn’t exactly get to enjoy it with us.  In this crazy real estate market, we have been so blessed that he continues to be busy.  Because he’s been so crazy at work, our yard (which is usually his “baby”) has gotten put on the back burner.

.

Brad’s dad (Granddear) very graciously gave up his Saturday to do our yard work.  Lilly Katherine could not have been more excited.  She was right behind him every step of the way.


She mowed and edged for 3 hours.


Needless to say, she didn’t sleep much last night because her legs were hurting so badly.

.

Saturday night we ate with some wonderful friends, Mike and Ame (who we don’t see often enough)!  Ame made a 5-course gourmet meal that was DELICIOUS!  I made a measly little dessert, that took about 10 minutes, but it was yummy.  I’ll post the recipe tomorrow.  I must get to bed.

.

However, I’ll end with two of the most wonderful things a mom can hear, and I heard them both this weekend…

.

#1…”Nigh nigh my bed” (Translation: Please stop talking and take me home and put me in my bed so I can cuddle up with my baby and my lovey lamb.  I’m only 2 and I’m ready to be asleep.)  Isn’t it so sweet when they start to vocalize what they need with sweet little words, instead of just fussiness.  Precious little maniac!

#2…”Mama, can I please have some more BROCCOLI?”  yes, YES, YES, yes, Lilly Kat, you may have a bowl of raw broccoli!  This is the child that, well, don’t judge when you hear this story, but…a few years ago i made this broccoli, cheese, butter, ritz cracker thing in order to get her to eat broccoli.  I’m sure the fake/bad ingredients totally negated any nutritional value of the broccoli.  I thought that if I hid something green in all that “stuff” she wouldn’t notice it.

.

I was WRONG!

.

She hated it and didn’t want to eat it.  I told her she had to eat one real bite if she wanted dessert.  She finally shoved a bite in her mouth, got down from her seat, walked over to me, and started gagging.  She threw up her entire dinner on the kitchen floor.  It was then that I decided I would not be making that dish again…and she had probably earned her dessert.  So, the question “Can I please have some more broccoli?” made.my.night!

My name is Kate.  I’m blessed to have an amazing husband and four precious maniacs.  This is the blog of our crazy, wonderful life!

I love God, my hubby, my babies, my family, good food, good company, and good times!  I love my friends, and I’ve been more than blessed with solid, life-long friends!

Brad and I were high school sweethearts (actually 5th grade sweethearts, but that’s a story for another time).  We live in the town in which we grew up, and we’re so fortunate to have most of our family here, too.

.

Being a wife and a mom is an incredible responsibility.  It’s challenging, rewarding, important, and fun.  I consider it a gift and a privilege, but that doesn’t mean it’s easy.

Webster’s definition is quite suitable.  I am proud to be a housewife, and it is my principal occupation.  However, I am not “The Real Housewife” that you see portrayed on TV today, and I have no desire to be.

God gives us an amazing picture of “The Real Housewife” in Proverbs 31:10-31.  This Real Housewife is an excellent wife and mother.  She is a woman that is noble, prepared, industrious, hard working (in and out of the home), wise, intuitive, caring, loving, and beautiful from within.  What a woman!  I don’t come close to this, but I am constantly reminding myself of this picture that God has given me.

Yummy, Yummy Cake Mix Cookies

We are slowly but surely recovering from the scatterbrained mistake I made yesterday. I’ve gotten used to the constant hum of box fans.  I’m working on loads and loads of laundry.  Every towel in our house was drenched.  All the loads of laundry separated to be washed on the laundry room floor were drenched.  All the clothes stored in paper bags in my laundry room closet were drenched.  LOTS OF LAUNDRY TO DO! I just went to Target (my most favorite place on earth) to get more detergent!

We are going to have to replace the wood floors.  One plank has already buckled and broken.  It’s not that pretty.  But nothing too major.  I am just so thankful I didn’t leave the house while the sink was running.

.

I had planned on making these cookies yesterday, but there was no baking in the house yesterday!  Only cleaning, drying, moping, vacuuming, drying, cleaning, you get the picture.

.

I decided I probably wouldn’t have time to make cookies today either, but I wanted to post the recipe for all of you who might have time for some afternoon baking.

.

Cake Mix Cookies

So so so yummy! This is such an easy recipe.  My roommate in college, Samantha, used to make these all the time.  We made batches and batches of these things.  We convinced ourselves that they weren’t that bad for us, since there was no vegetable oil.  We would even make a low fat version with Fat Free Cool Whip and eliminate the Chocolate Chips.  You have to try these light tasting, scrumptious goodies.

Ingredients:

1 Box Yellow Cake Mix

1 Tub Cool Whip

1 Egg

1 Cup Chocolate Chips

Powdered Sugar

.

Directions:

Combine Cake Mix, Cool Whip, Egg.  Fold in Chocolate Chips.

Now use your hand as a spatula and lick the Cool Whip tub, since you were told that you COULD NOT stick your fingers in it while we were dumping it out.

Drop a tablespoon of mixture into a bowl of powdered sugar.

Roll until completely covered.

Give a little space on the baking sheet, because they do spread.  It’s ok if there’s powdered sugar on the pan.  It doesn’t burn while cooking.

Bake at 350° for about 10-12 minutes.  Don’t let them brown…gooey is better!

They’re soft, chewy, moist, and just plain GOOD!  It’s best to let them sit on the cookie sheet for a few minutes before removing.  They fall apart easily if they’re really hot.  That doesn’t mean you can’t steal one for yourself.  Who cares if your cookie is ugly? :)

I tried to get a picture of my 3 maniacs with the cookies.  Look at that little thief in the bottom right corner.

Finally got a pic, but you can’t see the cookies.  Oh well, they didn’t last long anyway! :)

Ingredients:

1 Box Yellow Cake Mix

1 Tub Cool Whip

1 Egg

1 Cup Chocolate Chips

Powdered Sugar

Directions:

Combine Cake Mix, Cool Whip, Egg.  Fold in Chocolate Chips. Drop a tablespoon of mixture into a bowl of powdered sugar.  Roll to coat completely.  Place on cookie sheet 1-2 inches apart.  Bake at 350° for 10-12 minutes.

Strawberry Cake Mix and White Chocolate Chips

Chocolate Cake Mix and Mint/Chocolate Chips

Yellow Cake Mix and Peanut Butter Chips

You can use Low Fat or Fat Free Cool Whip, but that’s no fun!

We tried many variations, but we all like this one the best.

That’s One Way Clean Out My Laundry Room!

This morning I was rushing around trying to do laundry, pick up the house, make beds, make cookies, and take care of my maniacs.  I had several shirts that needed to soak in OxyClean, so I plugged the sink in my laundry room, turned the water on, and poured OxyClean in the sink.  I was watching the water rise, and it was almost to the perfect level.

.

At that moment, I heard a jingle, jingle sound running through our house.  The jingle, jingle of a collar.  The collar that belongs to a wild, crazy, four legged maniac named Sam…who was outside in the mud, and whose feet were bound to be nasty!  My suspiciouns were right.  Sam had been let inside.  His feet were filthy.  The kids forgot to wipe them off, and I wanted him OUT!  I was chasing him around the house, flustered and frusterated.  I was running late already (SHOCKING!) and I did not have time for this!

.

I finally gave up.  His feet were dry, my house couldn’t get any dirtier, and I needed to move on.  It was at that moment that I found AnnaLeigh on my bed, she had emptied a small tube of lotion and was rubbing it all over her legs.  Her legs, however, were clothed in footed/footy pajamas, so she was just rubbing the lotion on her clothes.

.

I did not handle the situation well, as I was already flustered, frusterated, and late!  I threw the girls in the bathtub, bathed them, clothed them, fixed their hair, brushed thier teeth, made yo-yo’s (a recipe I will post soon), and was just about to get dressed when Lilly Katherine said, “Uh, Mama, There’s WATER!”

.

I ran around the corner to find W.A.T.E.R!!!  I ran into the laundry room to find the source of the problem.  I assumed it was the washing machine, until I saw water gushing from the counter top, the cabinets, and even the drawers!  I HAD LEFT THE STINKIN’ SINK RUNNING FOR ALMOST AN HOUR!!!!!  How clueless am I?  Water was an inch deep in my laundry room, my laundry room closet (that holds everything), my a/c closet, my half bath, my entry from the garage, a little bit of my kitchen, and it was running into the garage.

.

I called brad.  No answer.  I called again.  No answer.  I called again.  No answer.  I had 3 children just staring at me.  AnnaLeigh decided that it was a good time to try out her rain boots (“boops” as she calls them), so she started splashing in the water.  She learned real quick that it wasn’t a good time for that.

.

I called my dad panicking.  My parents both jumped in the car and ran over.  Brad ran home and said it was about 8 times worse than he expected.  It was FLOODED!  My parents, Brad, Preston, and I spent the next 2 1/2 hours moving things out of the water and into the kitchen, den, and garage.  My dad had a professional shop vac, for such a time as this…and it was a life saver!

.

You can’t tell how deep the water is in the pic, but you can see the reflection of the fluorescent lights.  Believe me, my floors aren’t that shiny.  That reflection is from the inch of water on the floor.

This was not what I had planned for my morning!

.

I did get a clean laundry room out of the mishap!

.

But now my garage looks like this!


The other good thing that came out of this experience is that Lilly Katherine basically potty trained AnnaLeigh.  She spent the entire 2 1/2 hours taking A to the bathroom every 20 minutes.  She would tell her to go, wipe her, take care of it, everything!  They would just come report to me every few minutes that she tee-teed on the potty again.  LOVELY!  I’m serious when I say I am not potty training AnnaLeigh.  She can do it herself…or LK can do it. :)  Sweet girls!  They were so good during the whole ordeal.  Preston was such a sweet, hard worker, too.  The maniacs couldn’t have been any better!

.

The plan for the morning was to spend hours with my dear Baylor friends, Kathryn, Liana, Nancy, and Meredith.  They came and picked up P and LK and eventually I made it over there to spend a little time with them.  These friends are such wonderful blessings!

One Small Step

I’ll never forget my first day at Baylor.  My parents drove me down to good old Waco, Texas, and we spent all day unpacking in the blazing Texas heat.

Being the first born, everything was new for them.  Everything was new for me.  Baylor seemed HUGE!  The dorm seemed HUGE!  I had a potluck roommate (who turned out to be the best match I could have dreamed of and one of my dearest friends!)  I had emotions running WILD in my body because this was uncharted territory for our whole family.  I was excited, nervous, anxious, scared, and I felt so grown up, yet not old enough to be there all at the same time.

.

We had finished unpacking the car, the room was fairly settled, and I saw my mom tell my dad it was time to go.  What a strange feeling to be taken to another city and just left there.  Left!  They just dropped me off!  Was I ready for college?  As we said an emotional and tearful goodbye, I went back into my room to finish unpacking.  Almost immediately I opened the giant green rubbermaid box that held my shoes.  At the very top of the shoe pile, I saw this…

My little shoe.  Just one little scuffed up baby shoe with a little note rolled inside.  Sitting on the cold, hard, floor of dorm room #205, I read these sweet words,

Kate-

Today your mom and I take you to college.  This represents a big step in your life as we both took big steps 23 years ago.  We can no longer see you everyday, or even every week.  But we will pray for you every hour.  You will always be our little girl and our prayers have confirmed that you are at Baylor for a reason.  We love you!  -Diddy

I turned into a puddle of tears.  My roommate probably thought I was crazy. I’m pretty sure I was an emotional basket-case.

.

Fast forward a few years. (When my dad wrote the note he probably didn’t know I would get married, move less than a mile away, and bring my little maniacs to their house almost daily.) This past Thursday I walked into my parents’ house, and this little shoe was sitting on their counter with the note still rolled inside.  I opened it, read it, and remembered reading it for the first time as if it were yesterday.

.

I must say that I am so incredibly blessed to have 2 wonderful parents that love me, and have always loved me.  They taught me, trained me, spanked me, guided me, and showed me how to live honestly and ethically.  They are kind, caring, and have been wonderful examples of how to live as God wants me to live.

.

It’s so comforting to know that I have parents that did pray for me, do pray for me, and will always pray for me.  I want to be a prayerful woman!  I go through spells where I am fervent in prayer, and other times I am not as fervent.  One of my goals this year is to pray every.single.day. for my babies.  A friend of mine has a wonderful prayer plan for 2011, that I am going to try to stick with.  I would encourage you to look at it, too.

I know that by posting this, I have people that will keep me accountable.  Pray with me.  Let’s pray for our babies!  I’ve had so much fun with this new blog.  Thanks so much for reading about our crazy, wonderful life! :)


Nut-Nuts

It’s Friday morning.  The kids hear the garage door and they start chanting, “Nut-nuts!  Nut-nuts!”  They know that their sweet daddy is going to come through that door with little white sacks filled with sugary goodness.  AnnaLeigh calls them “Nut-nuts” so now the big kids call them that, too.  Friday is “DONUT DAY!” around here.

.

The kids get Donut holes and Brad brings me an apple fritter…aaaaand McDonald’s coffee.  Simply the best!  I’m sipping on it as I type.  You just can’t beat the $1 cup of  joe from Mickey-D’s!  Isn’t he the best daddy and hubby in the world?!?!

Brad gets our goodies on the way home from his middle of the night basketball game.   He says he plays basketball in the morning.  I say anything before 7:00 am is NOT morning.  He wakes up at 4:30 several mornings a week to play ball, run, work out, etc.   I.DO.NOT.DO.MORNINGS!…unless I’m still up from the night before.  There have been times where we’ve crossed paths as I’m going to bed and he’s waking up.  CRAZY!

.

Anyway, Brad plays basketball, then gets donuts.  This morning, Lilly Katherine said, “Daddy, do you have to win at basketball to get donuts?”  Oh, she cracks us up!  Today I’m going to start a new category called “Real Quotes” that will be filled with LK-isms!

.

Dog Days…

A few months ago everyone was whining, “I’m ready for colder weather.”  “Will this summer ever end?”

I said it then and I’ll say it now, I’m a summer girl!

.

Yes, it’s hot as stinkin’ heck around here in the summer.

.

Yes, the humidity is 95% most days.

.

But i miss the “DOG DAYS of SUMMER” and i miss this…

.

So, go away 28°!  I don’t mind being cold for a day or two, but I’ve had enough, thank you.

Oh, Boogers!

Most of the time Lilly Katherine and AnnaLeigh play really well together.  Of course there’s the occasional screaming, hitting, and “MINE!” but overall, they really have fun cooking, singing, playing with dolls, etc…

.

I love to listen to them interact as little adults.  I love when they play with their dolls and I get to see what I must sound like to them.  Sometimes good…sometimes NOT GOOD…always funny!

.

Today they were playing with their babies and it seems that the winter cold season has hit their toy box hard.  They had an infirmary in my room.  All their babies were “at the doc-ta” sick with various ailments.  AnnaLeigh’s baby’s back hurt (Mimi and Nana both have had back problems this week, and she’s heard them talk about it).  LK kept taking her baby’s “temp-shi-ter” (be careful saying that one) and her baby had a bad fever.

.

At one point I looked at AnnaLeigh and started laughing so hard.  She HATES to have her nose aspirated (sucked out), but we have to do it sometimes because she refuses, i mean REFUSES to blow her nose.  When I have to use that nasty “booger sucker” as we call it, I sit on her without putting my weight on her so she’s pinned down.  Sounds horrible, but the child leaves me no choice.  Anyway, I turned around and saw this…

So stinkin’ funny! I laugh every single time I look at this picture! Oh, I love my maniacs!

HOOPS!

Preston LOVES sports…LOVES, LOVES, LOVES sports.  He had his first basketball game of the year this weekend and he was so stinkin’ excited he could hardly stand it.  He asked me once an hour if I had his clothes clean and ready.  He reminded me a million times that the game was at noon.  (I guess he was worried I would be late or something…how dare he!) :)

.

I thank the Lord that Preston has athletic ability.  He DOES NOT get that from his mother!  I couldn’t throw a tennis ball through a hula hoop.  I’m proud of my little man and I’m thankful he’s so much like his daddy.

AnnaLeigh was sitting in Nana’s lap, and as long as she has chapstick (“ka-kick”) all is right with the world.  See that look of adoration…simple pleasures.

Winter Wonderland…Almost

Preston’s first comment to me when he saw the snow was, “Mama, last year when it snowed you said we should enjoy it because we wouldn’t see snow like that for another 15 years.  You were wrong, Mama.  Do you remember saying that?”  I don’t remember saying it, but I’m sure I did.  I’ve learned not to question this child’s amazing memory.  He’s a little maniac!

We had the best time with our neighbors!  My maniacs absolutely ADORE the Wells’ kids!  AnnaLeigh asks “Where’s Clay?” about 100 times a day.

Our Hero

This is my “little” brother, Taylor.  He’s a foot taller and double my weight, but he’s still my little brother.

Taylor is in the Air Force and just returned home from his third tour in the Middle East.  He works hard every day to keep you, me, my babies, and our future safe!  He is smart, devoted, loyal, and I’m thankful he is serving our great nation!  I’m proud to call him my brother!

To all the men and women who have selflessly given up time with their friends and family to serve our country, who have devoted their lives, their time, their passions to protecting us, THANK YOU!  You are not thanked enough.  You are not appreciate enough for what you do!  From the bottom of my heart, I THANK YOU!

My brother works hard!  His wife, Kelly, works hard, too.  I have seen what Kelly goes through when he’s away.  I can’t imagine what it’s like for those left here “holding the fort down at home” for months at a time.

If you know someone in the military.  Thank them!  If you’re at the mall  and you see a stranger dressed in uniform, go out of your way to say “Thank you!”  Since my brother has been in the service, I have found that just seeing people in uniform can bring tears to my eyes  (My eyes do moisten easily).  I try to make a point to thank them.  It’s the least I can do, when I think about what they’re doing for me.  I get emotional just thinking about it.  I know, I’m a pansy.

Pandemonium!

We tried out our new Christmas toys on a stroll/ride/bike/scoot around the block.

Preston, my cautious one, was too scared of falling to ride his scooter (razor) so he walked it instead.  Don’t be fooled by this picture.  He was scooting uphill at this point, which didn’t make him near as nervous as going downhill.

Lilly Katherine had never ridden her bike on the “bumpy road” and didn’t have any control at all, which should surprise no one!  She was going so fast she almost ran right into a parked car.  I didn’t think she knew where the brake was but she assured me that she did.  She’s probably going to know one speed…FAST.  Lord, help me when she’s a teenager.  Going uphill, she wanted me to pull her because pedaling would exert too much energy.  She’s a dainty flower and shouldn’t have to work that hard.  Oh, she’s so me!  Btw, her poor baby doll looks like the victim of a little whiplash.

I was trying to push AnnaLeigh in a stroller, but she wanted “OUT!”  Aaaaaaand, trying to walk the stinkin’ dog at the same time.  So picture this…WILD dog that hates his extend-a-leash is darting in-between 3 very unstable (physically, not mentally) kids.  I have one hand holding both the leash and a handle of the stroller.  My other hand is pulling a 4-year old on a bicycle, and P is trying to prove he isn’t scared.  We were a sight!  I had to take the dog home because i was afraid we were going to have a massive dog-pile (no pun intended!)

.

We did finally make it around the block with no major injuries.  I’m sure they’ll get better at their wheels and they’ll be zipping around the neighborhood in no time.  On second thought, I would rather have the chaos than have them grow up!  Who’s up for another lap?

A Heavy Heart

I want this blog to be about all the things that are floating around in my head.  While that may be scary sometimes, I think it will allow our lives to be documented as well as my passions, fears, dreams, etc.

.

This week my heart has been so heavy for a wonderful friend of mine, Kellie.

.

Kellie is a rock!  She’s stronger than anyone I’ve ever known.  She is an amazing mother to a 6 year old boy and twin 4 year old boys.

18 months ago Kellie lost her husband to a very aggressive brain tumor.  She cared for him, loved him, mourned him, and picked up the pieces to keep life as normal as possible for her boys.  At that point, I couldn’t imagine her sorrow or the loss she was experiencing as she had to raise 3 boys alone, go back to work, and keep life consistent for her boys.  She did it better than anyone could have.  She was prayerful and many people were praying with her and for her.  She stayed unbelievably strong.

.

In August, her father died unexpectedly.  All I could think at that time was, “Lord, why take her father so shortly after she had lost her husband.”   Still Kellie stayed strong, she juggled family and emotions, and kept going.

.

In November while she was at work (she works part time for Brad) her house was broken into.  The jerks that robbed this single mother of 3 took their electronics, her jewelry, and even her babies’ piggy banks.   Along with that they took her sense of security.  How could so much “stuff” happen to one wonderful woman?  Kellie is a low drama, low maintenance, happy, strong person, who deserves only the best.  Anyone else would have cracked at this point.  Kellie, again, picked up the pieces and kept rolling.

.

Friday morning (Dec. 30), Kellie texted me to let me know that her older brother (42) died in his sleep.  He went to bed thinking he had a bad cold, and didn’t wake up.  They are awaiting toxicology reports, but they assume he had an infection he didn’t know about and it went into his blood stream.  He left behind a wife and 3 children.

.

Kellie is devastated!  She’s had enough.  She loved her older brother so much, and so did her kids.  Her 6 year old son’s first questions was “Why does everyone in our family have to die?”  How can you answer that?  I’m 32 and that seems like a pretty accurate assessment.

.

My point…or plea…

Please keep this wise, strong woman in your prayers!  Pray for strength and peace.  Pray for comfort.  Pray that her kids will allow her to grieve.  Pray for safety for she and her boys.  Pray for understanding, because I truly just don’t understand.  I can’t imagine, nor do I want to imagine, losing Brad, my dad, and my brother in 18 months…or even 10 years!  It’s as if she’s Job!  Pray that she and her FAITH will be a light to others through this situation.

.

God’s word says in Jeremiah 29:11-13 “‘For I know the plans I have for you,’ declares the Lord, ‘plans to prosper you and not to harm you, plans to give you hope and a future.  Then you will call upon me and come and pray to me, and I will listen to you.  You will seek me and find me when you seek me with all your heart.  I will be found by you,’ declares the Lord.”

.

I know that God’s plan is perfect, and I’m sure she will be able to look back on this dark chapter of her life (20 years from now) and see how God was working through it all.  However, I know she’s broken right now so I’m just asking for prayers.

“Be devoted to one another in brotherly love.  Honor one another above yourselves.  Never be lacking in zeal, but keep your spiritual fervor, serving the Lord.  Be joyful in hope, patient in affliction, faithful in prayer.  Share with God’s people who are in need. Practice hospitality.”

Happy Birthday, Pinky!

Before you even ask…YES, I have 2 kids with birthdays the first week of January (and Brad’s is the week of Christmas).  Not very good planning.  I’ve never been known for my planning!

I just can’t tell you how much I love this little maniac!  She is small and mighty.  She rules the roost!  She is a miniature little woman, but has her mama’s Italian temper.  She has brought our whole family so much joy!  She makes us smile every single day, from the time she wakes up and starts demanding, “Come get me out!” to the way she bosses Sam (“Hammy”) around.  She’s a woman who knows exactly what she wants and will make everyone laugh as she gets her way.  Her smile lights up the room. She’s cute, wild, speedy, and loves people.

She is loving and motherly and LOVES babies. She loves her cousin Truett.  She’s 5 weeks older, and they have so much fun together.

AnnaLeigh completely has my heart!

We’re joined at the hip…almost literally!  At a whopping 21 pounds, I carry this child 90% of the time, and I love it!  I love that she loves me, and I love that she wants me.  She’s my shadow.  I love my little sidekick!  She melts my heart daily with her cute little personality.

I just can’t believe this little baby girl is 2!!!

Seems so cliche, but it’s just so true.  Time is flying.  I am trying to treasure every moment with my little Pinky, but somehow my baby is still growing up…even though I’ve demanded repeatedly that she not!  The good thing is that she’s getting older, but not bigger…so at least she’s trying to obey, right?

.

Lord, thank you for this sweet little firecracker that was such a surprise!  We didn’t plan this child at this time, but your plans are always greater!  Thank you for the absolute joy that she brings every one of us.  Thank you that my baby girls each have a sister to lean on and love.  Thank you that she has a wonderful older brother, whom she respects and admires.  Thank you for her precious smile and her nurturing little heart.  Thank you for her health, her abilities, her personality.  Please protect her and help me to protect her innocense.  Help me to know how to discipline her and train her in the way she should go.  Please guide her and give her wisdom and discernment that only comes from you.  Please help her to be a sweet friend and to have wonderful Christian friends, as I always have.  Thank you for blessing our world with this baby girl!

The Icing on the Cake

I love to make cupcakes, cakes, or sometimes just icing.  It’s so easy to make icing and it tastes so much better than store bought icing.  I have also used marshmallow fondant to make cakes, but there’s just nothing better than plain old buttercream icing.


Recipe

1 Cup Crisco (1 stick)

1 Cup Butter (2 sticks) at room temp

1 Bag Powdered Sugar (2 lbs)

1/4 Cup Milk

1/8 tsp Salt (or just use a Pinch of Salt)

1 1/2 tsp Vanilla Extract (use clear vanilla if you want the icing to be white)

1 tsp Almond Extract

Cream Butter and Crisco together with a mixer.  Add the bag of powdered sugar, salt, and milk.  You may want more or less milk depending on the consistency you desire.  (Also, I place a sheet of Saran Wrap around the top of the bowl so the powdered sugar doesn’t produce a billowing cloud in my kitchen.) Add the vanilla and almond extract and mix for about 20 seconds, scraping bowl.  I like it to get a little fluffy.  Taste it, of course.  Taste it again.  Maybe again.  You want to make sure it’s right.  It is the icing on the cake!

This Camo cake was a joint effort by my friend Dominique Jordan and myself.  We had so much fun, and the boys did too!

The kids enjoy icing cakes as well.  They love our neighbor, Kendall, and wanted to make her a cake.  So sweet.

Yesterday…

Yesterday my baby boy was born.  Yesterday!  How can it be that he was 7 years old yesterday?  I know i saw his sweet little face for the first time just yesterday, but yesterday was his 7th birthday.  How does that happen?  I remember every detail about his birth, the labor, delivery, being at the hospital.  I LOVED IT!  I vividly remember my sweet, sleep deprived husband lovingly gazing upon his newborn son the first night in the hospital, and in the sweetest daddy voice he whispered, “I love you, baby Presley!”  It was then that I, in a not so sweet voice, reminded him that our son’s name was PRESTON!

.

Yesterday after church our family met for lunch to celebrate with the little man.  We are so very blessed to have almost all of our immediate family here.  We just wish Uncle Taylor (my brother) lived closer, but he’s in the Air Force fighting for our country.   He comes home from the Middle East this week!  YAY!  (We hope to see you soon, Taylor and Kelly!)

Anyway, we went to lunch.  Preston got all kinds of goodies from aunts, uncles, and grandparents.  Sports, hunting, and guitars…that’s Preston’s life!  This child can do the batting stance of almost every single Texas Rangers player.  It’s so cute!  His favorite two players…can you guess?  His aunts and uncles did a great job!

What would I do without my sweet boy?  This 7-year old is such a precious gift from God.  I have prayed since birth that he would be just like his daddy, and he is almost a carbon copy.  For that, I am so thankful.  There’s no greater roll model on this earth than Brad!

7 things about my 7-year old…

1. Preston is all BOY! He’s a wild maniac!  He’s aggressive, tough, loves to wrestle, loves to hunt, loves to be a boy.  He tackles his sisters, he makes a ball out of any object in his hands, and he wants to be outside every single moment.

2. Preston is sensitive and thoughtful! He doesn’t want to do anything to upset anyone.  He wants to make sure everyone has exactly what they want and will willingly give up what he has for another.  He has a heart for people.  He loves to share and does it well.

3. Preston is Type A! He is a first-born male.  He wants things to be fair, just, and according to the rules.  He wants to be on time.  He lives by the clock and is always telling me when we need to leave.  (Who is this child and how did he come from my body?)  He enjoys routine, loves tradition, and will hold us to it.  He’s cautious, logical, analytical, and careful.

4.  Preston is an athlete! He can throw a ball further than I, kick higher than I, and make more baskets than I.  He loves all things sports!  He lives for stats on SportsCenter in the morning, and doesn’t forget any of them.  He’s competitive but still wants to include everyone.  He wants everyone to love sports.

5.  Preston is smart! He constantly amazes me with what he remembers, how he figures things out, and how quickly he performs work.  We don’t know where he received these brains, but we’re very thankful for them.

6.  Preston is loving and kind! He loves his mama, loves his sisters, craves time with his hero (his daddy).  He still gives me kisses, hugs and holds my hand.  He loves Lilly Katherine because she’s so funny and full of joy.  He loves AnnaLeigh because they are joined at the heart.  They have a special bond that is so sweet.

7.  Preston is responsible! He takes care of his homework without being asked.  He reminds me what needs to be taken care of.  He is my calendar, appointment book, and alarm.  He keeps this family going!

I love you baby boy!  I will love you forever!

Thank you, Lord, for this perfect, precious gift!  Thank you for entrusting me with this child!  Thank you that he’s more responsible than I and keeps me on my toes!  Thank you for his sweet heart, his mind, and his abilities.  Please help him to use all of these for your glory!  Lord, please give Preston your Godly wisdom and discernment all the days of his life.

Cupcakes were made that morning.  I didn’t have enough eggs, so they were a little crumbly, but still good.  The icing is always homemade!  I just can’t buy the fake stuff.  I’ll post the recipe soon. This is my little helper.  She could not wait to lick the icing from the beater.  The avocado green KitchenAid mixer was my Papa’s.  He gave it to my father YEARS ago, and my dad passed it down to me.  Still working great, and I love that it was my grandparents’ mixer.

I put Preston’s favorite candies on top of the cupcakes.

Raising ME!

Oh, my daughter…she is so very much like her mother and it’s going to DO.ME.IN!

I love her so very much and everything she does makes me smile.  She is happy and joyful and the most “blonde” person I’ve ever met.  I think I’m going to create a new section of the blog called “real quotes” so I can post all the funny things she says.

She just came to me and her mouth was blue.  I asked if she had eaten a cupcake (today is Preston’s birthday…more on that later) and she said no.  I went to the kitchen to assess the damage and I found that she had not eaten a cupcake.  She just stuck her finger in the icing of every single remaining cupcake.  I can’t reprimand her for this…because she is ME!  I totally understand her rationale.  She wanted to taste it without eating a whole one because she knew that wasn’t allowed.

When I was a Senior in High School my mom brought home a box of Shamrock cookies on St. Patrick’s day.  I saw that one had a leaf broken off, but I knew she needed the cookies for her Mah Jongg group that night.  Instead of taking a whole cookie, I broke a little piece off of every one of them.  I thought she was going to kill me when she opened the box.

Now I understand.  LK just stuck her grimey, dog-petting hands in every single cupcake.  Oh well, can’t say I blame her.  I love that maniac!

UPDATE…

As I was posting the pics on the blog, I heard a noise coming from the kitchen.  Sam found the cupcakes!  BAD DOG!  At least I know they’re liked by all!

A new year, a new chance to be a new person.  It seems like every year (since birth) I’ve had the same New Year’s Resolutions.

#1 Stop picking my fingernails

#2 Get organized

#3 Stay organized

#4 Go to bed earlier

#5 Eat better or exercise (I see no need for both)

Every.Single.Year!!!

Since I have obviously failed miserably every year, I’ve decided to go to the root of the problem…TV!  My New Year’s Resolution is simple this year…NO TV!  I have a few exceptions, but simply said, I am not allowed to touch the remote.  In order to set an attainable goal, I’ve committed to no TV for the month of January.

If I cut out the useless, mind-numbing, waste of time that fills my head with nothing positive, I will have time to blog, to sleep, to play “words with friends”, to exercise, to spend time with my husband, to do laundry, and to be the kind of mom my babies need.

For the past 3 years we’ve made New Year’s Pancakes.  We looked a little rough this morning.  Okay, a lot rough!

Truett and Caleb are my sister’s kids…and my babies’ best friends in the world!

Oh Christmas Tree

We love decorating the Christmas Tree.  Each ornament is special.  I try to write on every ornament when we got it and from whom.  I also try to get each child a new ornament every year.  It’s so sweet to see the bottom half of the tree FULL of ornaments.

Meet SAM!  He’s our newest member and he is DEARLY (often times too dearly) loved!  He’s a sweet “gog” as AnnaLeigh calls him.  She talks about her gog “am” all the time.

Boys will be boys

I don’t understand how there can be such a difference in boys and girls…but in my family, there is!  In one second, Preston was heading out to play baseball…

And the next second he was inside laughing and Lilly Katherine was crying…and this was in my floor!  Bat-1, Frog-0.

OUR FIRST HALF!

Brad and I ran our first half marathon (13.1 miles) in October.  We ran another in December.  We’ve had so much fun running together.  I feel that since I’ve run 2 halves,  I can say I’ve run a marathon! :)  I have so much more respect for anyone that can run 26 miles!

We ran with my sweet friend and inspiration, Ashley Barrett!  She’s WAY faster than I am, but I made it without walking, and that was my goal! (baby steps)

And…WE DID IT!  Our sweet families came out to support us.  It was a wonderful day and I was quite emotional when we crossed the finish line.  They announced our names as we were running in and I was just so thrilled that I finished (and that sweet Brad ran at my pace) that I planted a big “I DID IT!” kiss on him at the finish line!  Maybe one day a marathon…

Go Bananas! Go, Go Bananas!

We had a precious friend, Paige, over to play a few nights ago.  She is right in-between my girls in age, and they both adore her.  The girls were totally cracking each other up eating bananas.

Reason #97 why I’m not a teacher:  Wiggly Teeth

I don’t like wiggly teeth.  They gross me out.  They make my skin crawl, and they just don’t look natural at all!

Preston has about 30 wiggly teeth right now…ok, he has 3, but he just lost 2 teeth in July, and 3 more are loose!


The top tooth he lost in this picture hung on for WEEKS by a little thread.  I don’t know how he ate anything.  It was so nasty!  He finally bit into an apple and it came out.  I should have given him an apple 3 weeks earlier!

This tooth came out while chewing gum.  Thank goodness it wasn’t wiggly for too long.

He loves to wiggle them.  He loves to show everyone.  It’s just nasty!  He may  start first grade with about 8 teeth missing, which he’s super excited about!  Such a boy!

He gets really excited about the Tooth Fairy, but the Tooth Fairy that comes to our house is very irresponsible. About six months ago she forgot to come.  He was worried, but I happened to…uh…find the money for him.  You see, it had mysteriously fallen under the bed and he just didn’t see it.


This time, when there was no money under his pillow, my child took all the pillows off the bed, took everything out from under the bed, crawled under the bed.  It was perfectly clear there was no money.


When Lilly Katherine woke up, she busted out of the bedroom like a wild elephant, as she does every morning, and yelled, “Preston, did the Tooth QUEEN leave you some money?”  He just sadly said, “No.  She forgot.”


Well, that silly Tooth Fairy left 4 quarters on the table where Preston eats breakfast.  He didn’t buy it.


This week the Tooth Fairy remembered to come.  I saw her come at about 3 am, but at least she remembered, and that’s all that matters.  I also saw her borrow the dollar from another child’s birthday money, but it will be repaid…as soon as she remembers which child’s money it was.


In the meantime, I want to know, who came up with the idea of a fairy floating around giving money for nasty, bloody, little teeth?  I’m sure some mom made it up because she was tired of seeing a dead tooth dangle from her child’s face!  Thank you Tooth Fairy creator for giving moms just one more thing to remember (or forget) to do before going to bed.

Life’s a Beach!

We wanted to go to the beach, but it was 4:30 on a Tuesday afternoon and a beach is at least 4 hours away…so we opted for Sonic with my sister, Ashley, and her babies!  The kids had a blast.

This was AnnaLeigh’s first time to ever feel sand on her little feet.  She loved it!

AnnaLeigh is 5 weeks older than Truett.  They are so sweet together.  My girls love their cousins so much, but they are a little bossy to the poor boys.  I don’t have a clue where they get it!  It’s so funny to watch them interact with each other.  These two are going to be best of friends!

Lilly Katherine and Caleb love each other, too.  They play well together (for the most part).  She tells him what to do, and he usually obeys.  It’s so funny to see them together.


It appears as if Caleb is receiving instructions from “the supervisor!”


My sweet Preston is such a good big brother and cousin.  He’s a wild maniac, but he loves all 4 of the younger kids, and they love him, too.

I knew the kids needed baths, but I wasn’t going to let them in the house with sand from head to toe…so I hosed them off in the front yard.  I guess that makes me a “redneck” but They LOVED it!  Well, the sweet, calm cousins didn’t enjoy it, but my maniacs did!

And what crazy, wonderful blessings these three little maniacs are!


The Real Housewife

The Real Housewife:

house·wife  [Hous-wahyf]  noun,

A married woman who manages her household, esp. as her principal occupation.

Webster’s definition is quite suitable.  I am proud to be a housewife, and it is my principal occupation.  However, I am not “The Real Housewife” that you see portrayed on TV today, and I have no desire to be.


God gives us an amazing picture of “The Real Housewife” in Proverbs 31:10-31.  This Real Housewife is an excellent wife and mother.  She is a woman that is noble, prepared, industrious, hard working (in and out of the home), wise, intuitive, caring, loving, and beautiful from the inside.  What a woman!  I don’t come close to this, but I am constantly reminding myself of this picture that God has given me.

My Weakness

I love food.  I love to cook.  I love to eat.  I love food!

I eat as if I may never eat again.  I’m not proud of it…just stating the facts.  I love food that’s good for me.  I love food that’s BAD for me!  I just love food.  The only things that come to mind that I don’t like are

sushi rolls (I like sushi.  Not rolls)

nuts in desserts (I love desserts.  Love nuts.  They shouldn’t marry!)

miracle whip (What is that stuff anyway?)

sweet cornbread (I’m from Mississippi…sugar doesn’t belong in cornbread, people!)

and raw onions (unless it’s in pico)

Other than that, hand it over and I’ll eat it.


Anyway, I love watching the Food Network, but I’ve recently discovered that watching it at night before bed is a very bad thing to do…especially if it’s Cupcake Wars or Chopped or Unwrapped…okay, anything!  It makes me so hungry.


So, I’m lying in bed at midnight, watching the darn Food Network and my stomach starts growling.  I feel that I absolutely must find something to eat for fear that I may starve before morning.  I go to the kitchen, open the pantry, stare for a long time, pull out something I really don’t need, and eat it all…or at least more than I should.  This is what I just ate.


Not the whole jar, but I did need to finish it off.  There was just a little bit left, and it’s made of hazelnuts, so it’s healthy, right?


Bad, bad, bad!

Oh well, the good news is that now there’s no more Nutella in the pantry to tempt me.  If you haven’t tried it, you should!  My friend Cari Murray introduced me to this delectable treat, and I really wish she hadn’t.

I ate the entire jar.  By myself.   With a spoon.  Not in one sitting, of course.

Say “Cheese!”

My license expired on my birthday, so I went to the DPS to get it renewed.  That’s not a place I would like to hang out on my birthday…or any other day for that matter.  It didn’t smell pleasant, and there was a lovely line.

I didn’t think I needed to have a new picture made, but the lady said I did.  When I finished she looked at my picture and then looked at me and said,

“Maybe you should have done yourself up a little more.  This is going to be your picture for the next 6 years.  Happy Birthday!”

I just laughed, because I was in shock that she actually verbalized what should have been inner dialog.  I guess her filter wasn’t working that day.  It happens to the best of us!  Which reminds me of a verse I love, but have a hard time remembering,

“Do not let any unwholesome talk come out of your mouths, but only what is helpful for building others up according to their needs, that it may benefit those who listen.” Ephesians 4:29

My Passport picture is also HORRIBLE!  When I had my picture made, the lady at Kinko’s told me I wasn’t supposed to smile.  My Passport photo looks like a bad mug shot.  It’s so bad that when anyone in our family wants to laugh about something, they say, “Hey, do the face Mama made in her passport picture.”  Then everyone does it and the whole family starts laughing.  Good times!  So now my only two forms of picture identification are horribly embarrassing.  I guess I better stay out of trouble…and stay in the country.

No, I will not post them on here! :)

My hope is that when I renew my license or Passport in the future, that these pictures disappear forever.  Unlike this college ID that I like to use as blackmail sometimes.

Big Buddies

My wonderful friend, Meredith and her sweet baby boy, Benjamin, dropped by.  AnnaLeigh loves Benjamin, and thinks he’s her baby doll, which is funny because Benjamin outweighs AnnaLeigh!

She’s 18 months, he’s 4 months.

She’s little, he’s…not.

She thinks she can pick him up. She can’t!

She looks like such a little girl and not just a baby.  They grow up so quickly!

What mom wouldn’t love a relaxing day at the spa?  I would love to be pampered – to have my hair done, nails painted, maybe even get a massage and complete make-over!   This is as close as I’m going to get to that right now.

My maniacs fixed my hair and put make-up on me.  Then they wanted to take pictures of how beautiful I looked.
