We are slowly but surely recovering from the scatterbrained mistake I made yesterday. I’ve gotten used to the constant hum of box fans. I’m working on loads and loads of laundry. Every towel in our house was drenched. All the loads of laundry separated to be washed on the laundry room floor were drenched. All the clothes stored in paper bags in my laundry room closet were drenched. LOTS OF LAUNDRY TO DO! I just went to Target (my most favorite place on earth) to get more detergent!

We are going to have to replace the wood floors. One plank has already buckled and broken. It’s not that pretty. But nothing too major. I am just so thankful I didn’t leave the house while the sink was running.

I had planned on making these cookies yesterday, but there was no baking in the house yesterday! Only cleaning, drying, moping, vacuuming, drying, cleaning, you get the picture.

I decided I probably wouldn’t have time to make cookies today either, but I wanted to post the recipe for all of you who might have time for some afternoon baking.

Cake Mix Cookies
So so so yummy! This is such an easy recipe. My roommate in college, Samantha, used to make these all the time. We made batches and batches of these things. We convinced ourselves that they weren’t that bad for us, since there was no vegetable oil. We would even make a low fat version with Fat Free Cool Whip and eliminate the Chocolate Chips. You have to try these light tasting, scrumptious goodies.

Ingredients:
1 Box Yellow Cake Mix
1 Tub Cool Whip
1 Egg
1 Cup Chocolate Chips
Powdered Sugar

Directions:
Combine Cake Mix, Cool Whip, Egg. Fold in Chocolate Chips.
Now use your hand as a spatula and lick the Cool Whip tub, since you were told that you COULD NOT stick your fingers in it while we were dumping it out.
Drop a tablespoon of mixture into a bowl of powdered sugar.
Roll until completely covered.
Give a little space on the baking sheet, because they do spread. It’s ok if there’s powdered sugar on the pan. It doesn’t burn while cooking.
Bake at 350° for about 10-12 minutes. Don’t let them brown…gooey is better!
They’re soft, chewy, moist, and just plain GOOD! It’s best to let them sit on the cookie sheet for a few minutes before removing. They fall apart easily if they’re really hot. That doesn’t mean you can’t steal one for yourself. Who cares if your cookie is ugly? :)

Yellow Cake Mix and Peanut Butter Chips
You can use Low Fat or Fat Free Cool Whip, but that’s no fun!
We tried many variations, but we all like this one the best.
