This Weekend & Road Tar

This weekend was action packed and so much fun!  We started off Thursday night with our little dinner group, and I wish I had a picture from dinner, but I don’t.  I just have a recipe of what I took to dinner, Road Tar!  Recipe below.

Preston had strep Thursday and Friday, which made for a sad little man.  He didn’t get to play his baseball game Friday night, which made for a much sadder little man.  However, since he didn’t get to play, I promised him a treat, and we went to the newly opened TCBY for dessert.  YAY!!!  I have missed this place, craved it, and I have made my sweet hubby drive many miles out of the way to find TCBY stores that our navigation system says are open…only to find an empty shell of a TCBY.  I’m so thankful we have one again!  I could eat my weight in white chocolate mousse!

While we were there, we ran into Mere and her crew…along with 4,000 other people we know, and I was as gross as I could be.  Oh well. :)

Lilly Katherine had dressed both the girls in their tu-tus, so they were looking pretty fancy!

On another note, please look at this poor dog…just minding his own business Friday evening.

I turned around to find AnnaLeigh trying to put a diaper on him.  Poor Sam! (I took the pic so fast, I cut her head off.) :)

Little maniac!

Saturday evening we went to a Chris August concert at the outdoor amphitheater at our church.  The weather was amazing.  The music was wonderful.  Our family and friends at the concert made the night even better!  I love the sweet people that make our church, our church!

During the concert, AnnaLeigh spotted her Sunday School teacher, Miss Jennifer (a.k.a. “Je-be-jeber“).  She literally did a front flip over Brad’s leg trying to get a better view of Je-be-jeber, and so I told her she could run say “hi” to her.  She took off…and didn’t want to come back.  I finally had to take her picnic dinner to her, so she could eat with Je-be-jeber instead of me.  Sidenote:  Ben and Je-be-jeber are expecting their first baby in the fall…YAY!!!

My maniacs had so much fun running around after the concert.

I was trying to take a picture of LK, AnnaLeigh, and Truett (my nephew), but the little maniacs were acting rotten.  LK was posing for the pic, but AnnaLeigh and Truett were saying, “Backy up.  Backy up” as they walked backwards to get out of the photo-op.

So after the concert, we put our very exhausted maniacs in bed and I started scouring the kitchen for something to satisfy my hunger.  Have you heard the nursery rhyme that goes like this,

“There was a little girl, who had a little curl

in the middle of her forehead.

When she was good, she was very, very good,

But when she was bad, she was horrid.”

Well, that poem describes Lilly Katherine to a T, but it also describes me…of course.  AND, it describes my eating habits.  When I go to the grocery store, plan meals for my family, take the time to prepare, we eat really well.  When I don’t, I eat very, very poorly…like I did Saturday night (and all of last week).

My meal Saturday night…

First course: Powdered Donuts

Main course: Ball park nacho cheese sauce with (Multi-grain) Chips.  By the way, this yellow stuff is so fake that it would probably last til the Lord comes back…right Leigh?  Leigh Oliver’s Queso is so much better, but this was leftover from Preston’s party…and that’s what I grabbed.

Dessert: Road Tar (recipe below)

My point…yes, there is a point.  I actually went to the grocery store today, and I am going to cook real food for my people this week…not just grab pizza or Chick-fil-A for every meal.  I have found that the busier I am, the junkier I/we eat.  The above “meal” is a prime example.

That being said, we do still have some road tar in the freezer, and I do plan on polishing it off.  I’m sure you’ve noticed that I make really healthy meals and really bad desserts.  I figure they balance each other out, and I truly enjoy eating.  Anything!

Road Tar.  This is a dessert I have loved since middle school.  It’s much more appropriate for a Youth Group event rather than a dinner party, but I had limited time, so this is what I made.  It’s so easy…and so good!

Full recipe below.

Ingredients:

Leave your ice cream out while you’re preparing the rest of the ingredients.  It needs to be soft and spreadable.

Start by crushing the Oreos.  You can put them in a food processor if you like the crumbs fine.  I just stuck them in a plastic bag and beat them to death.

Next, crush the Butterfingers.  I like to crush them in the unopened package to reduce the mess.  Just pinch them or mash them on the counter top.

In a large bowl, add the Oreos, Butterfinger, and a stick of softened butter.

Mix.  I had to use my hands because I get impatient mixing with a spoon.

Layer half of the Oreo/Butterfinger crumb mixture in a 9X13 casserole dish.  Pat down to form a crust.  Can you tell why it’s called Road Tar?  Yum!

Sorry the picture quality isn’t great.  I wasn’t at home, so these are phone pics.

Add the entire carton of Ice Cream.  I used Vanilla Bean this time, but next time I think I’ll use Cookies and Cream…just to add a little extra to it. (as if it needs a little extra added to it) :)

Finally, add the second half of your crumb mixture.

Then cover and put it in the freezer for several hours.  Take it out of the freezer 5 minutes before serving so it can soften enough to cut it.

I think you are supposed to use a clean fork to take pics like this, but I stole a bite before I took the pic.  Oh well, next time I’ll take the picture first…or get another fork.

So, while I was making this yummy recipe, where was my helper you ask?  She was right there beside me.  Enjoying the process.

Road Tar Recipe

Ingredients:

  • 1 Package Oreo Cookies
  • 6 Regular Butterfingers or 2 1/2 packages of small Butterfingers
  • 1 Stick of Butter, softened
  • 1 Half Gallon of Ice Cream, softened

Crush the Oreos, Crush the Butterfingers.  Combine Oreos, Butterfinger, and softened Butter.  Layer half of the crumb mixture in a 9X13 casserole dish.  Press.  Spread softened Ice Cream on top of the crumb mixture.  Layer the remaining crumb mixture on top of Ice Cream.  Cover and put in freezer for several hours before serving.  Remove from freezer 5 minutes before serving.
