dessert from last week.\u00a0 I figured I would balance it with warm, comforting Italian Veggie Soup!\u00a0 I&#8217;m into veggies right now&#8230;and soup&#8230;and chocolate&#8230;just not all together!<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #008000;\">.<\/span><\/h3>\n<h3><span style=\"color: #008000;\">Plus, when it feels like it&#8217;s 30 below outside, you&#8217;re SUPPOSED to eat soup for dinner!<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #008000;\">.<\/span><\/h3>\n<h3><span style=\"color: #008000;\">Let&#8217;s do healthy first!\u00a0 I&#8217;ll post the dessert recipe tonight!<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #008000;\">.<\/span><\/h3>\n<h3><span style=\"color: #008000;\">I got this recipe from a fancy little cookbook I got in college&#8230;you know, the kind they sell at the grocery store check out counter.\u00a0 There are several recipes in here I still love to use.\u00a0\u00a0 Plus, I love what it says at the top of the cookbook, &#8220;A photo of every recipe!&#8221;\u00a0 That&#8217;s a MUST for me!<\/span><\/h3>\n<h3><span style=\"color: #008000;\"><a \/>\n<\/span><\/h3>\n<h3><span style=\"color: #008000;\">I didn&#8217;t have 2 cans of beef broth, so I used one can of beef broth and some frozen chicken stock I had made.\u00a0 Use whatever broth you have on hand.<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #008000;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/02\/feb-2recipes4.jpg\"><img loading=\"lazy\" #008000;\">Ingredients:<\/span><\/p>\n<ul>\n<li><span style=\"color: #008000;\">1 Tbsp EVOO<\/span><\/li>\n<li><span style=\"color: #008000;\">1 Medium Green Bell Pepper, chopped<\/span><\/li>\n<li><span style=\"color: #008000;\">1 Medium Eggplant, chopped (don&#8217;t peel)<\/span><\/li>\n<li><span style=\"color: #008000;\">2 Medium Zucchini, chopped<br \/>\n<\/span><\/li>\n<li><span style=\"color: #008000;\">2 Medium Tomatoes (I used 4 Romas), chopped<br \/>\n<\/span><\/li>\n<li><span style=\"color: #008000;\">2-3 Cans Ready to Serve Beef Broth (or chicken broth if that&#8217;s all you have)<\/span><\/li>\n<li><span style=\"color: #008000;\">2 Cloves Garlic (minced)<\/span><\/li>\n<li><span style=\"color: #008000;\">1 tsp Basil<\/span><\/li>\n<li><span style=\"color: #008000;\">1 tsp Oregano<\/span><\/li>\n<li><span style=\"color: #008000;\">4 tsp Ketchup<\/span><\/li>\n<li><span style=\"color: #008000;\">Salt and Pepper to taste<br \/>\n<\/span><\/li>\n<li><span style=\"color: #008000;\">1 package refrigerated Tortellini&#8230;OR&#8230;1\/2 cup dried cheese-filled Tortellini<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #008000;\">Heat EVOO in Dutch oven or large pot and add bell pepper, eggplant, and zucchini.\u00a0 Cover and cook over med-high heat 4-5 minutes.\u00a0 Stirring occasionally.\u00a0 Chop tomatoes.\u00a0 Add tomatoes, broth, garlic, basil, oregano, ketchup, salt and pepper to veggies.\u00a0 Bring to boil.\u00a0 Reduce heat and cover.\u00a0 Simmer about 5 minutes.\u00a0 Add tortellini and cook an additional 10 minutes or according to package directions for tortellini.\u00a0 Sprinkle with Parmesan Cheese.<\/span><\/p>\n<p><span style=\"color: #008000;\">.<br \/>\n<\/span><\/p>\n<!--
