A Healthy Recipe!"},"content":{"rendered":"<h3><span style=\"color: #339966;\">I love to cook.\u00a0 I cook as often as possible, and I always want to invite people over to eat with us.\u00a0 Often we invite our parents because my house is usually in no condition to entertain.\u00a0 Sad but true.\u00a0 The way I see it is this&#8230;If I&#8217;m going to spend all that time and energy cooking a good meal, I want people there that will eat and enjoy it!\u00a0 If I have food, I&#8217;m happy to share it.\u00a0 Plus, sometimes my 3 maniacs don&#8217;t offer the words of affirmation I desire after slaving away for hours.\u00a0 Please refer to the <a href=\"http:\/\/therealhousewife.com\/blog\/bright-bright-sunshiny-day\/\" target=\"_blank\">broccoli casserole<\/a> story from yesterday.<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">I think eating together at the table as a family is extremely important.\u00a0 I also firmly believe in cooking &#8220;real&#8221; food, not over-processed fake food.\u00a0 However, there might be a Totino&#8217;s Pizza or two in the freezer for emergencies, but I try to feed my kids &#8220;the good stuff.&#8221;\u00a0 I want to make sure my kids are eating their fruits and veggies. <\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">I love foods that are healthy, but I still like junk!\u00a0 I love sweets.\u00a0 LOVE SWEETS!\u00a0 If you don&#8217;t believe me, click on &#8220;Real Good.&#8221;\u00a0 If I ever found out I was diabetic, I think my world would come to a very hungry, depressed, unsatisfied, end (not to be dramatic).<\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">Anyway, I&#8217;m going to share the wonderful and very healthy veggies I made for dinner last night in this post.\u00a0 Later I will post the wonderful and very UNhealthy dessert I made Saturday night.\u00a0 I love them both equally&#8230;but differently.\u00a0 Make sense?<\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">I have always had a very strong admiration and love for <a href=\"http:\/\/thepioneerwoman.com\/\" target=\"_blank\">The Pioneer Woman<\/a>, but now that I&#8217;ve started blogging, I am pretty sure she&#8217;s absolutely amazing.\u00a0 The woman must not sleep a wink.\u00a0 If you haven&#8217;t read the blog, you should.\u00a0 If you do, you&#8217;ll be hooked.\u00a0 Don&#8217;t say I didn&#8217;t tell you!\u00a0 I love the way she documents her recipes with pictures and I have tried to emulate that, but it&#8217;s tough&#8230;and sometimes I forget&#8230;and I&#8217;m slow&#8230;and I have these little people hanging on me&#8230;and, just don&#8217;t make fun of my poorly colored, fuzzy pictures.\u00a0 I&#8217;m still learning.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h2><span style=\"color: #339966;\">Grilled Veggies<\/span><\/h2>\n<h3><span style=\"color: #339966;\">Use whatever vegetables you like.\u00a0 Sometimes I just use 3-4 veggies, other times I use anything I have.<\/span><\/h3>\n<h3><\/h3>\n<h3><span style=\"color: #339966;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/01\/jan-veggies1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2388\" Zucchini<\/span><\/h3>\n<h3><span style=\"color: #339966;\">2 Yellow Squash<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1 Onion<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1 Carrot <\/span><\/h3>\n<h3><span style=\"color: #339966;\">1 Sweet Potato (Red potatoes are great, too, but cut potatoes very thin)<\/span><\/h3>\n<h3><span style=\"color: #339966;\">2 Roma Tomatoes<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">Hand Full of Cauliflower<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">Hand Full of Broccoli<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1\/2 Bell Pepper (my kids don&#8217;t love the taste of cooked bell pepper)<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1 Small Carton of Mushrooms<\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">Marinade:<\/span><\/h3>\n<h3><span style=\"color: #339966;\">3-4 Tbsp Extra Virgin Olive Oil<\/span><\/h3>\n<h3><span style=\"color: #339966;\">3-4 Tbsp Balsamic Vinegar (I like a strong taste, but use less if you prefer mild)<\/span><\/h3>\n<h3><span style=\"color: #339966;\">3-4 Cloves Garlic, Minced<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1 tsp Montreal Steak Seasoning<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1\/2 tsp Italian Seasoning<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1 tsp Salt<\/span><\/h3>\n<h3><span style=\"color: #339966;\">1\/2 tsp Pepper (I use Garlic Pepper, but either will work)<\/span><\/h3>\n<h3><span style=\"color: #339966;\">.<\/span><\/h3>\n<h3><span style=\"color: #339966;\">Chop vegetables into bite size pieces.\u00a0 Put in large bowl with lid that seals tightly.\u00a0 Add remaining ingredients.\u00a0 Place lid on and turn bowl over several times to combine ingredients. <\/span><\/h3>\n<h3><span style=\"color: #339966;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/01\/january-079a1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2387\" title=\"january 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a><\/span><\/h3>\n<h2><span style=\"color: #339966;\">To Grill:<\/span><\/h2>\n<h3><span style=\"color: #339966;\">I love my handy-dandy grill basket and I highly recommend getting one if you don&#8217;t have one.\u00a0 I just coat it with &#8220;Pam for Grilling&#8221; and pour my veggies in.\u00a0 Grill over medium-low heat until tender\/crisp, stirring every 5-8 minutes.\u00a0 I prefer mine more tender\/soggy, so I cook them for about 30 minutes.<\/span><\/h3>\n<h3><span style=\"color: #339966;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/01\/jan-veggies2a1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2384\" 300w\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a><\/span><\/h3>\n<h2><span style=\"color: #339966;\">To Roast: <\/span><\/h2>\n<h3><span style=\"color: #339966;\"><em>(If you don&#8217;t want to turn the grill on, this is an easy alternative.\u00a0 Don&#8217;t grill, roast!)<\/em><br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\">Preheat oven to 350\u00b0.\u00a0 Place veggies on a large cookie sheet or in a 9X13 dish.\u00a0 Place in oven for 45 minutes &#8211; 1 hour.\u00a0 Stirring occasionally.\u00a0 You may want to use less Balsamic if you plan to roast.<br \/>\n<\/span><\/h3>\n<h3><span style=\"color: #339966;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/01\/jan-veggies3a1.jpg\"><img loading=\"lazy\" decoding=\"async\"
