Veggie Pizza"},"content":{"rendered":"<p style=\"text-align: left;\">One of my most favorite things to make is PIZZA!\u00a0 My kids will eat things on a pizza that they would never eat otherwise&#8230;and we just love pizza!<\/p>\n<p style=\"text-align: left;\">This is one of Brad&#8217;s most favorite recipes and one that I&#8217;ve been cooking since we got married.\u00a0 It&#8217;s such a good summer recipe and I&#8217;m regretting that I didn&#8217;t post it sooner, because Farmer&#8217;s Market veggies are always an added bonus to a good veggie pizza!<\/p>\n<p style=\"text-align: left;\">This recipe is really very simple.\u00a0 However, I got a little crazy this time and made my own crust.\u00a0 I&#8217;ve made this pizza hundreds of times and I have always used a store bought Boboli crust, but I&#8217;m trying to go a little more natural.\u00a0 Do whatever you prefer.\u00a0 I used <a href=\"http:\/\/52sundaydinners.com\/recipes\/papas-famous-bread-recipe\/\" target=\"_blank\">my grandfather&#8217;s bread recipe<\/a> for the pizza crust from my <a href=\"http:\/\/52sundaydinners.com\/recipes\/\" target=\"_blank\">dad&#8217;s food blog<\/a>.\u00a0 And <a href=\"http:\/\/52sundaydinners.com\/recipes\/deep-deep-deep-dish-pizza\/\" target=\"_blank\">this<\/a> is a variation of the recipe that they sometimes use.<\/p>\n<h2 style=\"text-align: left;\"><span style=\"color: #000000;\">Garden Vegetable Pizza (aka Garden Veggie Pizza) Recipe<\/span><\/h2>\n<p style=\"text-align: left;\">What You Will Need:<\/p>\n<p style=\"text-align: left;\">Pizza Crust (Store Bought Boboli Crust or <a href=\"http:\/\/52sundaydinners.com\/recipes\/papas-famous-bread-recipe\/\" target=\"_blank\">make your own<\/a>), Eggplant, Zucchini, Squash, Tomatoes, Garlic, Basil, Oregano, Thyme, Parmesan Cheese, Mozzarella Cheese, Olive Oil, Salt and Pepper<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/09\/Veggie-Pizza-008.jpg\"><img 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a>You can add onion, too.\u00a0 I just didn&#8217;t this time.<\/p>\n<p style=\"text-align: left;\">Add 1-2 tablespoons of Olive Oil to a skillet and add the Squash, Zucchini, and Eggplant.\u00a0 Saute for 8-10 minutes until tender crisp.<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/09\/Veggie-Pizza-015.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2965\" title=\"Veggie Pizza 015\" src=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/09\/Veggie-Pizza-015.jpg\" alt=\"\" width=\"576\" height=\"384\" srcset=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/09\/Veggie-Pizza-015.jpg 640w, http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/09\/Veggie-Pizza-015-300x200.jpg 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a>Add the tomatoes, garlic, and any dried herbs that you are using.\u00a0 If you have fresh herbs, by all means, use them!\u00a0 I only had fresh basil, and I used dried oregano and thyme.\u00a0 Add any dried herbs, salt, and pepper now, then add fresh herbs at the end.<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/09\/Veggie-Pizza-018.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2966\" title=\"Veggie 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a>Stir and saute about 3 more minutes.\u00a0 Add any chopped fresh herbs as you remove from heat.<\/p>\n<p style=\"text-align: left;\"><a 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a>Now, if you are using <a href=\"http:\/\/52sundaydinners.com\/recipes\/papas-famous-bread-recipe\/\" target=\"_blank\">homemade pizza crust<\/a>, stick it in the oven for about 5-7 minutes to firm the top before you put the veggies on it.\u00a0 Otherwise it may end up a little soggy.<\/p>\n<p style=\"text-align: left;\">I forgot to take a picture of these next few steps.\u00a0 Sorry!<\/p>\n<p style=\"text-align: left;\">Take whatever crust you have chosen to use, add 1 cup of the shredded mozzarella cheese to the crust and spread it evenly to within about an inch of the outer edge.<\/p>\n<p style=\"text-align: left;\">Add the sauteed veggies on top.\u00a0 Sprinkle with remaining 1\/2 cup of mozzarella cheese and grate some fresh Parmesan cheese on top of that.<\/p>\n<p style=\"text-align: left;\">Pop it in the oven for about 10 minutes at 400\u00b0 and ENJOY! :)\u00a0 This is delicious and nutritious!<\/p>\n<p for Garden Veggie Pizz<\/span><span style=\"color: #000000;\">a<\/span><\/h2>\n<p style=\"text-align: left;\">Ingredients:<\/p>\n<ul style=\"text-align: left;\">\n<li>Pizza Crust (Either 1 Boboli Prepared Crust or <a href=\"http:\/\/52sundaydinners.com\/recipes\/papas-famous-bread-recipe\/\" target=\"_blank\">make your own<\/a>)<\/li>\n<li>1 Small Eggplant<\/li>\n<li>1 Large Zucchini<\/li>\n<li>1 Large Squash<\/li>\n<li>2-3 Tomatoes<\/li>\n<li>1-2 Cloves of Garlic, minced<\/li>\n<li>1\/2 tsp Dried Basil (or about 8 Leaves Fresh Basil, chopped)<\/li>\n<li>1\/2 tsp Dried Oregano (or about a sprig of Fresh Oregano, chopped)<\/li>\n<li>1\/2 tsp Dried Thyme (or about 2 sprigs of Fresh Thyme, chopped)<\/li>\n<li>1\/2 tsp Salt<\/li>\n<li>1\/4 tsp Pepper<\/li>\n<li>1 1\/2 Cups Shredded Mozzarella Cheese<\/li>\n<li>Parmesan Cheese to taste<\/li>\n<\/ul>\n<p style=\"text-align: left;\">If you are making the pizza dough, do it ahead of time and cook it for 5-7 minutes before topping it with the veggies.<\/p>\n<p style=\"text-align: left;\">To make the pizza, dice your veggies.\u00a0 Saute the squash, zucchini, and eggplant for about 10 minutes in 1-2 tablespoons of olive oil.\u00a0 When they are tender crisp, add the tomatoes, minced garlic, salt, pepper, and any dried herbs.\u00a0 Saute about 3 more minutes and remove from heat.\u00a0 Add any fresh chopped herbs at this time.<\/p>\n<p style=\"text-align: left;\">Top pizza crust with 1 cup of the mozzarella cheese, and spread to within about one inch of the outer edge of crust.\u00a0 Top cheese with sauteed veggies, and sprinkle with remaining 1\/2 cup of mozzarella cheese and desired amount of Parmesan cheese.<\/p>\n<p style=\"text-align: left;\">Cook at 400 for 8-10 minutes or until cheese is melted, crust is cooked, and pizza is warm throughout.\u00a0 Enjoy!<\/p>\n<p style=\"text-align: left;\">.<\/p>\n<p style=\"text-align: left;\">And if you&#8217;re serving your Garden Veggie Pizza to guests, make sure you let your 2-year old, pizza-faced maniac put make-up on them after dinner.\u00a0 It&#8217;s a nice way to end a good meal!\u00a0 You&#8217;re a very good sport, Pike! :)<\/p>\n<p
