Onion Hummus"},"content":{"rendered":"<p>Just typing the title is making my mouth water!\u00a0 I love hummus and I make it almost every week (must be my Lebanese roots shining through).\u00a0 I&#8217;m always throwing something different in there to see how it tastes.\u00a0 About a month ago I caramelized an onion and threw it in, and it was so yummy!\u00a0 I&#8217;ve made it several times since.<\/p>\n<p>.<\/p>\n<p>What is HUMMUS?\u00a0 It&#8217;s not very appetizing to say the word &#8220;hummus.&#8221;\u00a0 It&#8217;s not very appetizing to hear that it&#8217;s made from garbanzo beans\/chick peas.\u00a0 It&#8217;s not very appetizing when you see it&#8230;but it is a healthy, wonderful, snack that is simple and delicious!\u00a0 It&#8217;s high in protein, iron, vitamin C, and fiber.<\/p>\n<p>.<\/p>\n<p>Many people use Tahini Paste in their hummus.\u00a0 Tahini paste is crushed sesame seeds, which are rich in protein, but also high if fat (12 g of fat\/Tbsp).\u00a0 It does give your hummus a slightly smoother texture, but not noticeable enough for me, plus I prefer the taste of a little extra olive oil to tahini.<\/p>\n<p>.<\/p>\n<p>My recipes are generally &#8220;this and that&#8221; kind of recipes.\u00a0 I just add stuff til it tastes good!\u00a0 (That&#8217;s not exactly helpful when you&#8217;re posting recipes on a blog.)\u00a0 My tip is, make it your own!\u00a0 Add or subtract heat, add fun ingredients.\u00a0 EXPERIMENT!<\/p>\n<p>.<\/p>\n<p>Ingredients:<\/p>\n<p><a href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/03\/March-056.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1441\" title=\"March 056\" href=\"http:\/\/therealhousewife.com\/blog\/wp-content\/uploads\/2011\/03\/March-057.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1442\" title=\"March 057\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a>At this point, I like to remove the onions from the eye and stir in freshly minced garlic.\u00a0 This saut\u00e9s the garlic just a bit so it won&#8217;t have such a bite.\u00a0 However, I LOVE fresh garlic, too.<\/p>\n<p>Rinse and drain your can of Garbanzo Beans (reserving liquid) and pour them in your food processor.<\/p>\n<p><a sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a>Trust me&#8230;is is WAY more delish than it looks! :)<\/p>\n<p>.<\/p>\n<p>Shake things up a bit.\u00a0 Instead of onions, add one of these options&#8230;<\/p>\n<ul>\n<li>Roasted Red Peppers<\/li>\n<li>Pesto<\/li>\n<li>Sun Dried Tomato Pesto (Giada has a great SDT pesto at Target)<\/li>\n<li>Kalamata Olives<\/li>\n<\/ul>\n<p>.<\/p>\n<p>RECIPE<\/p>\n<p><strong>Caramelized Onion Hummus<\/strong><\/p>\n<ul>\n<li>1 Can Garbanzo Beans (Chick Peas)<\/li>\n<li>1\/2 Medium Onion, Cut in strips<\/li>\n<li>2 Cloves Garlic, Minced<\/li>\n<li>4-5 Tbsp Olive Oil (Divided)<\/li>\n<li>1 1\/2 Tbsp Reserved Garbanzo Bean Liquid (or Water works fine)<\/li>\n<li>1 scant tsp Cumin<\/li>\n<li>1\/2 tsp Salt<\/li>\n<li>1\/2 tsp Cayenne Pepper (add 1\/4 tsp at a time to see how spicy you like it)<\/li>\n<li>Lemon* (optional)<\/li>\n<\/ul>\n<p>Cook the Onions over medium heat in 1-2 Tbsp EVOO until golden brown, but not burned.\u00a0 Remove from heat and add the minced garlic.\u00a0 Stir.\u00a0 Rinse and drain the Garbanzo Beans, reserving liquid.\u00a0 Add all ingredients to the food processor and process until smooth, scraping down sides.\u00a0 Add additional salt or EVOO if needed.
